Cheesy Sausage & Hash Brown Casserole

Sausage, hash browns, cheese and onion topped with crispy, buttery Corn Flakes and more cheese. This is the perfect company breakfast or a dinner like we did. The leftovers were just as delicious as the day I made this.

Preheat oven to 350º and spray a

9” x 13” baking dish with cooking oil.

In a skillet over medium heat,

cook the sausage and onion

until no pink remains. Remove

from the heat and let cool.

Add the thawed hash

browns to a large bowl.

In a medium bowl add the melted

butter, soup, sour cream, 1-1/2 cups

cheese, salt and pepper then stir

to combine.

Add the sausage and onion

to the hash browns and stir.

Add the soup ingredients to the

sausage and hash browns then

stir to combine.

Place the mixture into

the prepared baking dish.

Gently toss the Corn Flakes and 1/4 cup

of melted butter until all of the

Corn Flakes are coated.

Place the Corn Flakes evenly over

the top of the hash browns.

Sprinkle with remaining

1/2 cup of cheese.

Bake for 50 minutes or

until hot and bubbly.

Then serve, this is just as

delicious to eat as leftovers.

Ingredients

  • 1# ground breakfast sausage
  • 1 medium onion, diced
  • 1 – 30 oz. bag frozen shredded hash browns, thawed
  • 2 – 10.5 oz cans cream of chicken soup
  • 1 cup sour cream
  • 1/4 cup butter, melted
  • 1½ cup shredded cheddar cheese
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 cups Cornflakes cereal
  • 1/4 cup butter, melted

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 9″ x 13″ baking dish with cooking oil.
  3. In a skillet over medium heat, cook the sausage and onion until no pink remains and onion is tender. Remove from the heat and let cool.
  4. Add the thawed hash browns to a large bowl.
  5. In a medium bowl combine 1/4 cup of melted butter, soup, sour cream, 1-1/2 cups cheese, salt and pepper.
  6. Add the sausage to the hash browns and toss to combine.
  7. Add the soup mixture to the hash browns and toss to combine.
  8. Pour the mixture into the prepared baking dish.
  9. In a medium bowl gently toss the Corn Flakes with the remaining 1/4 cup melted butter making sure all the Corn Flakes are coated.
  10. Sprinkle the Corn Flakes evenly over the hash brown mixture then sprinkle remaining 1/2 cup of cheese on top.
  11. Bake for 50 minutes or until hot and bubbly then serve.

  2. That looks delicious. And what a creative use of Corn Flakes! I can imagine that it added a sweetness to the savoury ingredients!

    • Thank you Ab and yes the Corn Flakes gave it a great taste as did the sausage. I have always made hash brown casserole and I told my husband lets make it a meal and add sausage, it tasted amazing.

  3. Interesting about using the Corn Flakes Diane. My mom used to crush Corn Flakes to make a coating for chicken instead of Shake and Bake sometimes and another oddity was Pringles potato crisps in her chocolate chip cookies.

    • The Corn Flakes tasted crunchy and added so much flavor. I never tried Pringles in anything but have used saltine crackers and Ritz crackers. I bet the Corn Flakes on chicken is delicious too.

  4. I do brunch every year for Christmas and I make a french toast casserole and frittata. I think I will make this instead of the frittata for something different. A much easier prep for sure.
