Anyone that makes a homemade dinner is welcome to type the name of one recipe prepared in the comments, then we can all scroll through the comments for recipe ideas. This will be a weekly Friday post and only recipes on the Friday posts will be allowed.

If someone wants your recipe and asks there will be no pressure to share it, it’s up to you. I will accept links, but only to the recipe, however it may take me a few days to approve it so I can make sure the link is legitimate and not spam. NO SPAM WILL BE ALLOWED, ONLY RECIPES OR YOU WILL BE BLOCKED.

I find the hardest part of making dinner isn’t the process, but figuring out what to make. So go ahead and post ONE RECIPE ONLY EACH FRIDAY in the comments or feel free to just read what others have made. Either way, I hope we all get some great ideas to make our meal planning easier.

  3. Stuffed chicken breasts with Brussels Sprouts

    Ingredients:
    2 boneless chicken breasts butterflied
    Breadcrumbs
    Grated parmesan
    Garlic powder
    1 slice white bread, crusts removed
    Grated mozzarella
    Milk
    Olive oil
    Brussels sprouts
    Splash of Sauvignon Blanc or Pinot Grigio

    Preheat your oven to 375 degrees.
    In a mixing bowl combine all the ingredients and mix well to a stiff texture.
    Butterfly the chicken breasts and put the stuffing on one side only. Then fold over
    the other side. You may want to seal it with a toothpick.
    Pour some olive oil into a cast iron skillet, maybe ⅛ of an inch. You can use a roasting pan, but if you have the skillet, better. Place the stuffed breasts into the pan and rub a little more olive oil on top. Season with some salt, garlic powder and a pinch more of bread crumbs sprinkled over the top.

    The brussels sprouts are really easy. I’ve used frozen with very good results. After thawing, simply season them as you like, salt, pepper and add some diced onion. I also like to add a bit of unbleached flour or a few unseasoned bread crumbs. Toss it all together until well coated. Then put them into the pan with the chicken. Add a splash of the wine and roast for about 15 minutes, then turn the breasts over so they cook evenly and the tops don’t dry out or burn. Roast for about another 20-25 minutes until tops are golden and juices run clear.

  9. My family loves pasta – any shape, any style. We also love tuna but not hot tuna (no offense to the 1970s rock band). So what could be better than a Tuna Pasta Salad? It’s also incredibly easy.
    I just boil up whatever box of pasta my hand lands on first – anything except spaghetti or linguini. It needs to be something like shells, elbow or ziti. While that’s cooking I mash up a couple of cans of tuna (for one lb of pasta I like at least 3 cans of tuna, maybe 4). In a large bowl (preferably one with a cover) mash the tuna so it’s all broken up – no big clumps. At this point your pasta should be done so drain it, run it under cool water to keep it from sticking together, and let it cool off in the colander. Add whatever leftover veggies you have in the fridge or add 2 large cans (drained) of mixed veggies to the tuna. I really like peas, carrots, corn, lima beans, green beans, even diced cooked potatoes, so for this dish the canned mixed veggies are perfect. Stir together and add mayo as you go along to get the creamy consistency you want. Some people like a lot of mayo; I prefer less. You can always add more if you need to. After veggies, tuna and mayo are blended, add the cooked pasta which has been allowed to cool off. Mix everything together very well, adding more mayo if needed (each to his own) and s&p to taste. Chill and serve. This is even better after a day or 2 in the fridge when all the flavors have blended together. Easy, satisfying and delicious spring/summer meal. Enjoy!

      • Stitches came out yesterday and the incision didn’t close completely. I have to wear my hand/wrist guard to protect it from splitting open further. There was an intern when I had surgery and the stitches looked awful and barely caught one side. I would bet $100 the intern stitched me up. 🤦🏽‍♀️ Still having pain but it’s only been two weeks. My husband has been amazing helping me. Thank you for asking Nancy! ❤️

  10. As hot as it was this weekend, your dish as a cold pasta salad would be welcome. Reading the comment ahead of mine about your post-surgery ordeal. How awful – I have no words for this and hope you have no further issues. Not bad enough that COVID delayed this second carpal tunnel surgery, without more complications. Hope things get better for you Diane.

      • I’m happy to hear that you’re healing up Diane, but whoever thought when you originally booked both procedures it would be this far into the growing season and you’d be still recuperating?!

      • I know, I have so much work to do outside. I am keeping up with all the Oriole feeders, hummingbird feeder, pond and taking out the robins nest in the cabana every night. I have to remove it so she doesn’t lay eggs because then I can’t remove it. I don’t want bird poo all over the inside and she would probably attack us. I have the spinning things all over the cabana to keep the birds out but she figured out how to avoid them. Terry did all the planting this year, even my porch flower planters. He also sprayed for me so it’s not too bad outside but I like it manicured. Blinders for me again.

      • You are far more industrious that I would have thought coming off this surgery – you are a trooper. I have the same issue with a robin – I put a box over my front porch coach light – she likes to build in the “elbow” and that box has worked the last few years, just an empty box that held medium garbage bags, but when I came home last Friday and saw a nest on top of the box, I was livid. Mud and poo drips and straw clinging to the drops. I get it. Terry is a saint. I have weeds everywhere – they shot up like crazy. We have a rainy/stormy weekend coming up.

      • I’m sorry but I had to laugh, what a smart bird. I feel bad for you it is such a mess! I always used a balloon in my light on my front porch but now I have lights in the porch ceiling thank God! Yes Terry does so much for me with all my health issues. I don’t know how it would all get done without him. Sounds like you can walk early tomorrow but that’s it this weekend.

      • A balloon is a good idea – a helium balloon or a regular balloon? Yes, I knew that would happen … no car for two gorgeous weekends, then car is back and a stormy weekend. I hope we don’t have severe weather. I was ready for bed and someone has music blaring so I came back here.

      • Just blow up a regular balloon (not all the way so it has some give to it) and push it into the crevice. They can’t get the nesting material to stick. I went to the Dollar store and bought a bag of them. Oh loud music is my pet peeve! That’s one reason I moved to the country.

      • OK, good to know – I sent you pictures what I have up there – it looks terrible. Thank you for the tip … I’m thinking that would do the trick – they don’t try to peck it with their beak? I can’t open my blinds – they are stuck shut (not a good thing I know). I can’t tell if it is the house on the corner or behind me. I’m worried about behind me as they have a huge fire pit in the middle of the yard and saw lots of beer cans and bottles around so now worried they’re drunk and have a fire issue. On the corner is the doberman and his family – they tie the dog up every weekend and have parties all day and into the night. I don’t want to move, house is paid for, the right size for me but tonight I am just fed up with it all. Dog on corner barks all day long. Next door to me a small dog whines and cries all day as it is alone. Slowly driving me up the wall. I like the balloon idea – very smart!

      • The sad thing is if you move you could have the same issue. We only have one house near us and a elderly woman lived there until the last 5 years. It was always quiet which I loved. She passed away and the new owner turned the upstairs into an apartment. The guy that lives downstairs is the owners brother. He plays his music so loud we have to keep the windows shut. They run 3 loud ATV’s almost daily. He bought a huge bell to ring and even bought a kid size fire truck that is so loud it sounds like the real thing. On school days he takes his kids inside at 8:00 pm so that is my quiet time with nature. Once school is out for summer it’s fireworks, bon fire, parties and noise until dark. This year I decided to let go of the frustration and work around it, when they’re not home I go outside to work or sit. I had to let it go because it was so stressful. So I totally understand how you feel, the dogs would make me crazy too. They have some really good earbuds to use when you listen to music, drowns out everything. Lol

      • They are still at it with the music. I use earplugs for bed, but don’t like doing that – I do heave a weather alarm if there is severe weather which we may have tomorrow morning early. Now there is yelling and screaming going on. I would be so angry if I were you and you specifically moved to the country to get away from the noise and have all that going on. You cannot pick your neighbors unfortunately. I deal with my boss all day and today there was a computer issue and I couldn’t remote in – working is a little more difficult that way, but no call from the computer guy … just ready to have a relaxing evening and this. I have to let it go too I think.

      • I’m tempted to do it – I don’t know what kind of crappy neighbors have moved in behind. Like your neighbor lady who died, I had a nice older lady who died and someone bought the house and rents it out … renters don’t care about ordinances. I can’t call the police as I’m not sure what house it is. The guy on the corner has speakers out there and plays Mexican music all day long. I am going into long-term savings to buy a whole-house generator as I worry about this erratic weather. I told myself tonight that are you sure you want to spend that much money with the neighbors like they are, but as you say, it can be anywhere. I have called the police on the dog on the corner barking on the weekends several times already. We/I had never called the police for noise, but this is nerve wracking.

      • Thanks Diane – they have finally shut it down and I listened to the weather … four hours from now the first round of bad weather is coming thru … the weather alarm will go off. Wish it had rained on their parade tonight.
