Stovetop Braised Potatoes With Beef

A Ukrainian cuisine made with beef stew meat that is mouthwatering and fork tender. Chopped carrots with diced onion and cubed potatoes cooked into a seasoned tomato-based sauce that is made completely on top of the stove.

Heat the oil in a large

pot over medium heat.

Add the beef stew cubes, cooking

until the outside of the cubes

are browned.

Chop the onion and peeled carrot.

Add the carrot and onion to the meat,

then salt and pepper to taste. Cook

until the vegetables are tender.

In a small bowl whisk the tomato

paste and Better Than Bouillon

with warm water.

Pour the tomato liquid into the meat

then add the bay leaves. Bring to

simmer, cover and cook for 45 minutes

or until the meat is very tender.

Peel and dice potatoes.

Add potatoes and 1 cup of

water (if needed) to the meat.

Simmer, covered, about 30 minutes

or until the potatoes are tender.

Remove bay leaves and serve.

Ingredients

  • 1 Tbsp. oil
  • 2# beef stew cubes
  • 1 large carrot
  • 1 large onion
  • 6 oz. tomato paste
  • 1 Tbsp. beef Better Than Bouillon
  • 4 cups warm water
  • 3 bay leaves
  • 1 Tbsp. salt or to taste
  • 1 tsp. pepper or to taste
  • 10 medium potatoes
  • 1 cup water (if needed)

Directions

  1. Heat oil in a large pot over medium heat. Add the beef stew cubes and cook until the meat is browned on all sides.
  2. Chop the onion, peel and dice the carrot then add to the beef.
  3. Salt and pepper to taste. Cook until the vegetables are tender, stirring frequently.
  4. In a small bowl, whisk together the 4 cups of warm water, tomato paste and Better Than Bouillon.
  5. Pour the liquid into the beef and add the bay leaves. Bring to a simmer, cover and cook for 45 minutes or until the beef it very tender. Stir occasionally.
  6. Peel and dice the potatoes then add them to the pot along with 1 cup of water (if needed).
  7. Bring to a simmer, cover and cook for 30 minutes or until potatoes are tender then serve.

    • You won’t be sorry if you make this one. Yes I had my surgery last Thursday so it’s been a week. Stitches out Friday next week, they are already driving me nuts. I’m so glad it’s over, now time to heal. Thank you for asking. 💕

    • Thank you Janet. It was a fabulous recipe. I thought it was going to taste like beef stew, not at all! It was so strange though, I felt like I should have served it with something like noodles or a vegetables but after tasting it, it was perfect all by itself.

    • That’s what I thought too but it was so different than beef stew. It is very thick and the carrot and onion helped make the thick sauce. Do give it a try Ab, it was amazing.
