This creamy Tuscan sauce with shrimp and pasta was a quick and easy meal because as the linguine cooked I made the cheese sauce with spinach and tomatoes.

This recipe looks fabulous – I’ll need to tweak for my allergies and intolerances – yet overall concept will work!! I’ll sub pumpkin for tomato and vegan cheese for cheese. And, for those of you out there that think yuk…don’t knock it until you try it!
Exactly! Trying new things is what I preach to my grandkids all the time. I tell them if they don’t like it fine but at least try it. With your health issues, it’s nice you can figure out a delicious way to substitute a recipe.
Update: Hubby said it was “Marvelous!” And, I forgot to add substitute Oat Milk for the Cream.
