Easter Stove Top Bird Nest Cookies

Chow Mein Noodles, milk chocolate and peanut butter dropped into a bird’s nest shape and topped with candy eggs makes this the perfect cookie for Easter. The crunchy chow mein noodles with the sweetness of the chocolate and peanut butter flavor was SO GOOD!

Cut a large sheet of parchment paper

for your counter. Pour the chow mein

noodles into a large bowl and the

candy eggs into a small bowl.

Bring the water to a simmer in the

bottom pan of the double boiler.

Pour the chocolate chips into the

top part of the double boiler,

stirring constantly until

smooth and creamy.

Remove from the heat and

stir in the peanut butter.

Pour the chocolate mixture

over the chow mein noodles.

Toss gently coating all of the chow

mein noodles with the chocolate.

Drop the noodles onto the parchment

paper into a small nest shape (I used

a coffee scoop for mine) then top

with three of the candy eggs.

Store leftovers in the refrigerator.

Ingredients

  • 12 oz. chow mein noodles
  • 10 oz. bag of miniature candy eggs, any kind will work
  • 1/3 cup creamy peanut butter
  • 11.5 oz milk chocolate chips

Directions

  1. Cut a large sheet of parchment paper for the counter.
  2. Pour the chow mein noodles into a large bowl and the candy eggs into a small bowl.
  3. In the bottom pan of a double boiler over medium low heat, bring the water to a gentle boil. Add the milk chocolate chips to the top pan. Stirring constantly, melt until smooth and creamy then remove from the heat.
  4. Stir in the peanut butter until it is totally mixed into the chocolate.
  5. Pour the chocolate over the chow mein noodles and toss gently until all of the noodles are coated.
  6. Drop by coffee scoop size clumps onto the parchment paper, trying to keep it in the shape of a bird’s nest. Add three candy eggs to the top, then repeat.
  7. Refrigerate until the chocolate is set then serve, refrigerating the leftovers.

  1. These look so Springy and appetizing Diane. As I mentioned in the other comment, ours were just plain, not chocolate. Who needs a chocolate Easter bunny with these treats?

  2. Diane, I don’t presently have a stove, only a rice cooker and microwave. Can I melt the chocolate and PB in the microwave?
