Sausage, Egg & Cheese Buttermilk Muffins

A quick & easy breakfast muffin that has all the things I love for breakfast in it. They are great on the weekends or to reheat for breakfast on the go.

Add the sausage to a large

skillet over medium heat.

Cook the sausage until no pink remains

and completely cooked. Remove

the skillet from the heat.

Remove the sausage with a slotted

spoon and put it into a large bowl.

Leave 2 Tbsp. of the grease in the

skillet and discard the rest of the grease.

Place the egg in a small

bowl and whisk slightly.

Add the egg and buttermilk to the

skillet then whisk slightly to combine.

Gradually whisk in the Bisquick.

Whisk until somewhat smooth.

Add the cheese and stir.

Pour the cheese mixture into

the sausage bowl and stir well.

Divide the mixture between

12 well-greased muffin cups.

Bake in a preheated 350º oven for

18-20 minutes until golden then serve.

Ingredients

  • 1# ground pork breakfast sausage
  • 1 egg
  • 1 cup buttermilk
  • 2 cups Bisquick or a biscuit baking mix
  • 8 oz. shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 12-cup muffin pan thoroughly with cooking spray.
  3. Add the sausage to a large skillet over medium heat. Cook until no pink remains and it is completely cooked. Remove the skillet from the heat.
  4. Remove the sausage, with a slotted spoon, to a large bowl. Leave 2 Tbsp. of the sausage grease in the skillet and discard the rest of the grease.
  5. In a small bowl, whisk the egg slightly.
  6. Add the egg and buttermilk to the skillet then whisk slightly to combine.
  7. Gradually whisk in the Bisquick or biscuit baking mix until somewhat smooth.
  8. Add the cheese and stir.
  9. Pour the cheese mixture into the sausage bowl and stir well.
  10. Divide the mixture between the prepared 12 muffin cups.
  11. Bake for 18-20 minutes until golden then serve.

Store leftovers in the refrigerator. These are great to pop in the microwave for an on-the-go breakfast.

  1. Fun, easy idea. I am all for using that delicious sausage grease! My father-in-law insisted that eggs be scrambled in butter, never bacon or sausage grease. Butter is good, but bacon and sausage flavoring just enhances the eggs so much more!

    • They sure would Tierney. I had all the grandkids, my son, my husband and myself here last Saturday morning. I used them as a grab and snack for breakfast. Thank you ❤️
