Turkey or Chicken Noodle Soup

After eating so much food over the holidays, a simple turkey (or chicken) soup will really taste good. When they had turkey on sale, just before Thanksgiving, we bought two extra and I cut them up into sections and then I froze the sections in quantities to make soup with. This made for a very inexpensive and delicious meal.

In a large pot add the chicken or turkey,

plenty of chicken broth to cover the meat.

Bring the broth to a boil and reduce to

a simmer. Cover and simmer until the

meat is tender and completely cooked.

Remove the meat from the pot and allow

it to cool until you can touch it without

getting burnt. Discard the skin, bones and

any cartilage then cut into bite sized

pieces. Cover and set aside.

Peel the carrots and onion then cut all

the vegetables into bite sized pieces.

Strain the broth then return to the pot.

Salt and pepper to taste then add all of

the prepared vegetables. Bring to a boil

over medium heat, reduce to a simmer

and simmer, covered, until all of the

vegetables are tender.

Add the noodles and bring to a boil over

medium heat. Reduce to a simmer, cover

and cook until the noodles are tender.

Add the meat back to the pot and cook a

minute or until the meat is hot then serve.

Ingredients

  • chicken broth or prepared Better Than Bouillon, enough to more than cover the meat 
  • 3 large carrots
  • 3 large stalks of celery
  • 2 medium onions
  • turkey or chicken, bone in and skin on (whatever amount you want, I used 2 whole turkey wings)
  • salt to taste
  • pepper to taste
  • 16 oz. wide noodles

Directions

  1. In a large pot add the turkey or chicken. Pour in enough chicken broth or prepared Better Than Bouillon to more than cover the meat.
  2. Over medium heat, bring broth to a boil. Reduce to a simmer, cover and cook until the meat is cooked completely, is tender and falling off the bone easily.
  3. Remove the meat from the pot and let it cool enough so you can touch it without getting burnt. Discard the skin, bones and cartilage. Cut the meat into bite sized pieces, cover and set aside.
  4. Peel the carrots and onion then cut all the vegetables into bite sized pieces.
  5. Strain the broth then return to the pot. Salt and pepper to taste. If you want more flavor, feel free to season with any other seasonings such as poultry seasoning.
  6. Add the onion, carrots and celery to the broth and bring to a boil over medium heat. Reduce to a simmer, cover and cook until the vegetables are tender.
  7. Add the noodles and bring to a boil over medium heat. Turn to a simmer, cover and cook until the noodles are tender.
  8. Add the cooked meat and simmer until hot then serve.

  2. Turkey noodle soup is a great way to use up leftovers and leftovers of Turkey! The hubby made one using a very similar approach and ingredients as your recipe after Thanksgiving last Fall and it was delicious!

  3. That looks especially delicious given how rotten I have felt since getting my flu shot and Moderna booster one week ago. And – guess what I just tested positive for? Happy to say I got the test AFTER being sick – is TENET reality? – so I am already recovered-ing. Our 12-year-old had a fever this morning, Nell decided to buy some at-home rapid tests, and… either I am pregnant, or I have COVID-19. Had COVID-19. Temporal pincers, indeed. 🙂

    • I am so sorry! My daughter just had a really bad bought with Covid and I thought she wouldn’t make it through it, so scary. I am glad you’re not pregnant though! 🤣 Take care of your 12 year old. My 7 year old grandson was sick for 1 day and my 10 year old granddaughter was a symptomatic. I felt so helpless and could only take food to the front porch. My granddaughter took care of her mom, brother and 2 dogs. I was so proud of her. I hope you entire family gets well soon! 💕

      • Thank you. Your warmth and kindness always make things better. 12YO has not yet tested positive – and Nell and 13YO are fine – so, fingers crossed. What gave me pause was getting a fever; I NEVER GET FEVERS. I actually run closer to 97.6. Oy. 🙂

  4. Making a big pot of chicken soup today. We had freezing rain overnight and the roads are a sheet of ice. Staying inside where it’s warm and comfy. Glad I went shopping yesterday. This soup will hit the spot! 🥶 🍜
