Cheesy Sausage & Noodle Casserole

Sausage, noodles and cheese tossed in a seasoned tomato based sauce then baked in the oven. This is a quick easy meal and it is perfect for that time you don’t want to spend all day in the kitchen.

Cook the pasta according to the package directions.

Save 3/4 cup of the pasta water and

then drain the pasta.

Meanwhile, in a large skillet over medium heat

add the sausage, onion, garlic, salt and pepper.

Cook until no pink remains and the onion is

tender. Discard any excess grease.

Add the soup and water, stir and simmer for 3 minutes.

Spray a 9” x 13” oven safe dish with cooking oil.

Return the pasta to the same pot you cooked it in.

Add the sausage mixture and toss gently to combine.

Pour mixture into the prepared casserole dish.

Sprinkle both kinds of cheese evenly over the top.

Cover tightly with foil and bake in a

preheated 375º oven for 20 minutes.

Remove the foil and bake for 10 more minutes.

Remove from the oven and serve.

Ingredients

  • 16 oz. wide noodles
  • 3/4 cup cooked pasta water (from the boiled noodles above)
  • 16 oz. bulk sausage (your favorite, I used hot Italian sausage)
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1/2 tsp. salt or to taste
  • 1/4 tsp. pepper or to taste
  • 2 – 10.75 oz. cans condensed tomato soup
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat oven to 375 degrees.
  2. Cook the pasta according to the package directions. Set aside 3/4 cup of the pasta water then drain the pasta.
  3. Meanwhile, in a large skillet over medium heat add the sausage, onion, garlic, salt and pepper. Cook until there is no pink left in the sausage and the onion is tender. Discard any excess grease.
  4.  Add the tomato soup and pasta water, stir and simmer for 3 minutes.
  5. Spray a 9″ x 13″ casserole dish with cooking oil.
  6. Return the pasta to the pot you cooked it in. Add the sausage mixture and gently toss until combined.
  7. Pour the noodle mixture into the prepared casserole dish.
  8. Sprinkle with both kinds of cheese evenly.
  9. Cover tightly with foil and bake for 20 minutes. Remove the foil and bake 10 minutes more then serve.

    • This is Amish noodles and they are hard to find around here but guess where I found them? At the butcher when we picked up our side of beef! 😳 Never expected that so I bought 6 bags of them. Thank you!

  1. This looks really good. I have not heard of Amish noodles, I guess I will just use egg noodles. I bet the kids would enjoy this one. I don’t know if I would use hot sausage or not, although I know the kids would love that.

    • Amish noodles are like homemade noodles, so much better than the store bought noodles. You can use any kind of sausage you want. I like to make this with ground beef, mild or hot Italian sausage or breakfast sausage. Every time I make it with a different type of sausage it’s a different taste. Thank you Carla. ❤️
