  1. I like the “old-fashioned” way of frosting cupcakes–without the big swirl of frosting on top. With the lovely mousse filling, only a moderate amount of frosting is needed.

  2. Oh my!! Here we are – already in bed – but now I’m up and on my way to the kitchen to see if there’s any chocolate … all because of your yummy post of these chocolate mouse filled cupcakes!

  3. Chocolate cake with chocolate filling with chocolate icing. Wow! Chocolate is supposed to help lower your cholesterol. I’m not sure that’s what the nutritionist intended, but it would work with my diet.

      • They looked good Diane. Seeing the chocolate mousse title made me think I’ll look in my mom’s cookbook – she made something easy with chocolate pudding, Cool Whip (or maybe powdered Dream Whip) and she put in a cup of coffee. We always used instant coffee, so she made a cup, let it cool. It was delicious. Surely it can’t be that difficult.

      • It was very good. I liked angel cake, but my mom didn’t care for it – said it was too plain. So she would make up a batch of it and slather it on the angel cake. When my neighbor Marge moved next door, she liked angel cake, so we used to split one. They are always so large, so that worked perfectly.

      • Yes, we’d laugh sometimes about slinging a half-angel cake over the fence. Back in the day, she had a garden and I’d come home from work and see a bag hanging on the fence with tomatoes mostly. More “good ol’ days stuff.”

    • I was so excited to taste them because I had never made anything like this. According to my family it was a total success. I had to give most of it away or I would have eaten it all. 😂 Thank you so much!
