Seven Fruit Two Cup Salad

I call this my Seven Fruit Two Cup Salad because it has 2 cups of each kind of fruit and 2 cups of juice. Add whatever fruit you have in the house and don’t be afraid to use canned fruit, like I did, for even more variety.

Rinse and dice the fresh fruit into bite size pieces.

Drain any canned fruit and reserve the liquid.

Pour the canned juice into a measuring cup.

If there is not enough for 2 cups, add

orange juice to the 2 cup mark.

Pour the juice over the fruit and toss. Refrigerate for four

hours, tossing every hour. This will keep for a few days but

looks best when served in about four hours. I ate mine

for three days and the fruit was still firm and delicious.

Ingredients

  • 2 cups blueberries
  • 2 cups cantaloupe, firm
  • 2 cups pears, firm and peeled
  • 2 cups nectarines, firm and peeled
  • 2 cups grapes, seedless and cut in half
  • 2 cups canned mandarin oranges, in light syrup (reserve liquid)
  • 2 cups canned pineapple tidbits, in 100% juice (reserve juice)
  • 3/4 cup orange juice, approximately

Directions

  1. Rinse the fresh fruit and cut into bite size pieces.
  2. Drain the canned fruit and pour the liquid into a 2 cup measuring cup. Add enough orange juice to equal 2 cups.
  3. Pour the juice over the fruit and toss.
  4. Cover and refrigerate for 4 hours, tossing every hour. I keep mine for a few days but the fruit looks best at 4 hours.
  5. Toss before serving.

    • Me too Patty. Usually I make a sugar/juice to pour over the top but this time I didn’t use sugar because the fruit was so sweet this year. It was a great year for fruit. Thank you!

  2. This I can handle. My mom used to make ambrosia salad which I loved. I made it since I’ve been alone and by the time I finished it all off, I didn’t want to see it for a long time. There is nothing nothing nicer than chilled fruit salad on a hot day.
