Summertime Pasta Salad

My husband surprised me with this delicious pasta salad. He added red tomato, yellow pear tomato and cucumber, all from our garden. He also added black olives, pepperoni and cheese with the pasta. Toss with a simple Italian dressing and you have a wonderful pasta salad for any occasion.

This is a Pasta Salad I made a while back. You can use any type of pasta, add any vegetable or any kind of meat such as ham, salami, pepperoni etc., the possibilities are endless!

    • It was a great way to wake up Mitzy. He is an early riser because he is in bed by 11:30 pm. Me, I stay up to 3:00 am and I don’t get up until 11:00 am so he had plenty of time to surprise me. It was so sweet of him to do because he knows it’s my favorite pasta salad.

    • This is my favorite pasta. I don’t know if it’s all of the flavor or the fact that by changing the ingredients makes it tastes different every time we make it. I have never put cucumbers in it before and I am so glad my hubby did! Safe driving Cheryl!

    • Awe thank you and yes the fresh garden veggies made it even better. Now I’m ready for BLT’s! I refuse to eat them with store bought tomatoes and look forward to our garden tomatoes with it.

  2. I love pasta salad and I think when you did the last post I said “I should get the fixin’s to make it.” We used to have it a lot in the Summer with either chicken strips or smoked sausage. Now I have a hankering for it!

      • Yes, I hope one day the laptop is off the store and I won’t have to consider where to stuff it while I put something on the stove. I was using the vegetable noodles in the crockpot, the ones made from chickpeas and lentils. They were good and I got them on sale as otherwise they were pricey. I am looking forward to using the crockpot again … I had to move it for the ants, cleaned it up and decided until I was done with errands and bringing all the groceries in for Winter. We used to have Suddenly Salad as it had all the seasonings included.

  3. Hi. Your husband did a great job! My wife made a delicious entree salad recently, served chilled. It contained tuna fish, cooked farro, onion, tomatoes, bell pepper, chick peas and a couple more ingredients. She dressed it with a citrusy dressing.

  4. Well, salads are the best way to get a combination of both delicious and healthy food. This dish looks like a perfect balance of all the yummies of pasta, cheese, meat and the healthy garden veggies. This can be the best surprise on a lunch or dinner date. I would have devoured all of that in just one go.
