Chicken, Vegetables & Stuffing Casserole

Cooked rotisserie chicken with mixed vegetables, tossed in a creamy sauce and topped with stuffing. This bakes in about 25 minutes in a baking dish for a great family meal.

Spray a 9” x 13” oven safe dish with cooking oil.

Prepare the Stove Top Stuffing according to the

package directions (except increase the

water by 1/2 cup) then set aside.

In a medium skillet melt the butter and add the

diced celery and onion, cooking until tender.

In a large bowl add the three cans

of soup and stir to combine.

Add poultry seasoning and pepper. (I added

salt but felt it was too salty and is not needed.)

Add the shredded chicken and all of the vegetables.

Toss to combine.

Pour into the prepared dish.

Place the stuffing over the top evenly.

Bake in a preheated 400 degree oven, uncovered,

for 25 minutes or until hot and bubbly then serve.

Ingredients

  • 1 – 6 oz. box prepared chicken stuffing with 1/2 cup extra water
  • 3 Tbsp. butter
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 2 – 10.5 oz. cans cream of chicken soup
  • 1 – 10.5 oz. can cream of mushroom soup
  • 16 oz. frozen mixed vegetables, thawed
  • 2 cooked rotisserie chicken breasts, shredded
  • 1/2 tsp pepper, or to taste
  • 1/4 tsp poultry seasoning 

Directions

  1. Preheat oven to 400º.
  2. Spray a 9” x 13” baking dish with cooking oil.
  3. In a small skillet over medium heat melt the butter. Add the celery and onion cooking until tender.
  4. In a large bowl combine the cream of chicken and cream of mushroom soups. 
  5. Add the poultry seasoning and pepper then stir to combine.
  6. Add the onion and celery, mixed vegetables and chicken, toss to combine.
  7. Spread mixture into the prepared baking dish.
  8. Top evenly with the stuffing.
  9. Bake for 25 minutes or until hot and bubbly then serve.

  1. Looks great, Diane. Using cream soup as an ingredient is so great, such a versatile ingredient. Have the Sam’s Club rotisserie chicken doubled in price as rumored?

  2. Looks good Diane. I have not made anything in the crockpot since the ant invasion – I cleaned up that corner and will start back in the Fall. I did make chicken, veggies and stuffing in the crockpot and it was good, but likely not as good as this meal looks.
