Easy Chicken Noodle Soup

Rotisserie chicken, carrots, celery, onions, noodles, herbs and seasonings all simmered in chicken broth that makes a hearty but simple homemade Chicken Noodle Soup. If you don’t have time to make your own chicken broth just do it this way.

Peel the carrots and slice. Dice the celery and onion.

Pour the chicken broth into a large pot then add

the carrots, celery, onion, parsley, rosemary,

bay leaves, thyme, salt and pepper. Bring to a

boil over medium high heat then reduce to a

simmer. Cover and simmer until

the vegetables are tender.

Add the noodles and cook until your desired doneness.

Remove the bay leaves and discard.

Cut the cooked rotisserie chicken into small cubes.

Add the chicken and simmer until the chicken is hot.

Then serve, refrigerating the leftovers.

Ingredients

  • 1 large onion
  • 3 medium carrots
  • 3 medium celery
  • 2 medium bay leaves
  • 3 sprigs fresh rosemary (or 1/2 tsp. dried)
  • 1/2 cup fresh parsley (or 2 Tbsp. dried)
  • 2 tsp. salt or to taste
  • 1 tsp. pepper or to taste
  • 16 oz. thick noodles
  • 3 cooked rotisserie chicken breasts, skinless and boneless
  • 16 cups (128 oz) – 20 cups (160 oz.) chicken broth (I added 16 cups then added 4 cups more the next day as it absorbed into the noodles)

Directions

  1. Peel the carrots and slice them thick. Dice the celery and onion thick.
  2. Pour the chicken broth into a large pot. Add the carrots, celery, onion, parsley, rosemary, bay leaves, thyme, salt and pepper. Bring to a boil over medium high heat then reduce to a simmer. Cover and simmer until the vegetables are tender.
  3. Add the noodles and simmer until your desired doneness.
  4. Remove the bay leaves and discard.
  5. Cut the rotisserie chicken into small cubes. Add them to the soup and continue to simmer until hot then serve.
  6. Refrigerate leftovers.

This recipe makes a large pot of soup. Recipe can be cut in half, however, the leftovers are wonderful.

      • Our equivalent of Sam’s Club is CostCo and the rotisserie chicken is the best. I think it’s a loss leader, priced low to get you to come in and buy other stuff! Haha.

      • My husband told me a couple days ago Costco is going to double the price of their rotisserie chicken! You know once they do the others will follow! 😡 Hopefully it’s a rumor.

      • They are saying there is a chicken shortage because of all the fast food restaurants selling so many chicken sandwiches now. Supply and demand! 😡 I hope they are wrong!

      • I have to get back to using the crockpot Diane. I moved it off the countertop as that was the favorite spot for the ants to play (ugh). I have to get back into it again … the end of the ants and then the beginning of the computer debacle at work had me frazzled.

      • They are finally gone Diane – maybe three weeks ago now. Thank goodness because I thought they were gone several times, only to find them again. I’m going to get a perimeter spray next Spring. I didn’t want to because of the hummingbird(s) (one) but I don’t want to go through that again. There were more ants than normal it seemed to me. The computer fiasco was May 20th. I tried to update the “stove laptop” yesterday … just simple updates. It made me change my password and do updates to Cortana … I didn’t want Cortana, just wanted to do updates. I got a message “try back later”. SMH!

  1. This is very similar to how I make chicken noodle soup. Every great once in a while, I buy a raw chicken and make my own broth, which is better, but takes longer, of course. Usually, when I buy a raw chicken, my husband requests I make chicken and dumplings.

  2. An absolute favourite dish in our house … and so easy to make (especially when one can use rotisserie chicken – which we do!)
