Red Potato Salad With Bacon

Red Potatoes with celery, onion, hard boiled eggs, bacon, Miracle Whip or mayonnaise and seasonings made for a delicious side dish with our meal or even for a potluck. Using red potatoes is a nice change from using regular white potatoes and adding bacon gives this potato salad an extra special flavor.

Rinse and boil whole red potatoes until

tender when you stick them with a knife.

Drain and refrigerate until cold.

Peel and chop hard boiled eggs.

Dice the onions and celery.

Cut cooked red potatoes into small bite size pieces.

Cook the bacon and crumble it. I always keep 2#’s

of bacon that is already cooked and crumbled in

my freezer so all I have to do is add it to my recipes.

Add the chopped eggs, onion, celery,

bacon and potatoes to a large bowl.

Salt and pepper to your taste.

Add Miracle Whip or mayonnaise to your taste.

Gently toss to combine, cover

and refrigerate until cold. Lightly

sprinkle with paprika then serve.

Red Potato Salad With Bacon

Ingredients

  • 3 pounds red potatoes
  • 6 hard boiled eggs
  • 1 small onion
  • 2 large stalks celery, rinsed
  • 1/2 pound bacon
  • Miracle Whip or mayonnaise, to taste
  • 1 tsp. salt, or to taste
  • 1/2 tsp. pepper, or to taste 
  • paprika for garnish

Directions

  1. Rinse then boil the red potatoes until tender when you stick a knife in them. Drain and refrigerate until cold.
  2. Peel and chop the hard boiled eggs.
  3. Dice the celery and onions.
  4. Cook and crumble the bacon.
  5. Cut the cold red potatoes into small bite size pieces leaving the skin on.
  6. In a large bowl add the potatoes, eggs, celery, bacon and onion.
  7. Salt and pepper to taste then toss to combine.
  8. Add your desired amount of Miracle Whip or mayonnaise and gently toss until thoroughly combined.
  9. Cover and refrigerate until cold. Sprinkle lightly with paprika then serve.

    • This was the first time I put bacon in my potato salad and used red potatoes for potato salad. I thought it was delicious but my hubby didn’t like it with bacon, imagine that! It worked out great though because it was more for me. 🤣
