Caprese Orzo Salad
If you love Orzo Pasta and add mozzarella cheese, cherry tomatoes and basil to it with a delicious homemade balsamic vinaigrette it will leave you wanting more!

Rinse the cherry tomatoes and basil then pat dry.
Cook the pasta according to the package directions,
rinse with cold water and drain thoroughly.
Pour the pasta into a large bowl.
In a small bowl add the balsamic vinegar,
olive oil, honey, salt and pepper.
Whisk with a fork until combined.
I have never used these fresh mozzarella pearls
before and I was so excited to find them
as they are perfect for this salad.
Separate the pearls and add them to the pasta.
If you can’t buy the pearls you can cut up small
pieces from a block of cheese or even use
fresh shredded mozzarella cheese.
Slice the basil into small strips and cut the cherry
tomatoes in half then add them to the pasta.
Gently toss to combine.
Pour the balsamic vinaigrette over
the pasta and toss until it is absorbed.
Cover and refrigerate until cold then serve.

Ingredients
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- 1 Tbsp. honey
- 10 oz. dry orzo pasta
- 8 oz. fresh mozzarella pearls or shredded mozzarella cheese
- 4-6 fresh basil leaves, cut into small strips
- 1-1/2 pints cherry tomatoes, sliced in half
- salt to taste
- pepper to taste

- In a small bowl add the balsamic vinegar, olive oil, honey, salt and pepper. Whisk with a fork until combined.
- Add the mozzarella cheese, cherry tomatoes and sliced basil to the pasta. Toss to combine.
- Pour the balsamic vinaigrette over the pasta and toss until it is absorbed.
- Cover and refrigerate until cold then serve.

This sounds so good! We only discovered orzo pasta last year and we’re huge fans! There’s a red pepper pesto orzo recipe from Gousto recipe boxes that we love which features chicken thigh, but you could easily make it without the chicken for a vegetarian option and it would definitely be just as good. Guess what I need to fit on next week’s menu now?!

They’re the same sort of thing as Mindful Chef and Hello Fresh, but when we looked at reviews, they ranked highest in the UK. Some of their recipes are really good and you can find their cookbook online. It’s free to view, but of course, you’ll need to buy your own ingredients 🙂
I just googled it they look like some good meals. My daughter buys one of them weekly and really likes hers too. I think it’s wonderful for a small family or portion control. She buys for 2 people and eats one and splits the other one between the kids.

I have never had a Caprese salad but my mom used to just take sliced tomatoes and half-slices of mozzarella cheese and drizzle balsamic vinegar on it at the height of tomato season – yum, the tomatoes that you could just wash and eat with a little salt as they are so good.
This recipe was just like that only add the orzo pasta. If you love pasta you would love this Linda.
