One Pot Taco Spaghetti

Not your typical spaghetti! Ground beef, tomato, spaghetti, Mexican cheese, Rotel, taco seasoning and more is what gave this delicious One Pot Taco Spaghetti so much flavor. I will be making it again, soon, according to my grandchildren.

Place the ground beef in a large pot and cook

over medium heat until brown and no pink

remains, breaking into small pieces. Drain

any excess grease. Stir in the taco seasoning.

Add the Rotel, tomato paste and

diced tomatoes then stir to combine.

Add the water and stir.

Add the spaghetti, stirring until it

is completely covered with the liquid.

Bring to a boil then lower burner to

a simmer until the pasta is cooked.

Add and stir in the salt,

pepper and cilantro (or parsley).

Stir in the Mexican cheese, saving

some to sprinkle on top, then serve.

One Pot Taco Spaghetti

Ingredients

  • 1# ground beef
  • 1.25 oz. packet of taco seasoning 
  • 2 – 10 oz. cans Rotel (diced tomatoes with green chilies)
  • 1 – 14.5 oz. can diced tomatoes
  • 1 – 6 oz. can tomato paste
  • 6 cups hot water
  • 16 oz. spaghetti 
  • 1/2 tsp salt or to taste
  • 1/4 tsp pepper or to taste 
  • 2 Tbsp. fresh cilantro (or parsley)
  • 8 oz. shredded Mexican cheese

Directions

  1. In a large pot over medium heat, cook the ground beef until brown and no pink remains. Drain the excess grease.
  2. Stir the taco seasoning into the ground beef.
  3. Add the Rotel, tomato paste and diced tomatoes and stir to combine.
  4. Add the water and stir.
  5. Add the uncooked spaghetti making sure all of it is covered with the sauce and doesn’t stick together. Bring to a boil then turn to a simmer and cook uncovered until pasta is cooked and sauce thickens.
  6. Add the salt, pepper and cilantro (or parsley).
  7. Stir in the Mexican cheese until melted, saving some for garnish, then serve.

    This looks super easy to prepare and really delicious … we try to eat pasta only every second or third week (oh dear, all the carbohydrates – but so damn good!) … this recipe will definitely make the list on the next pasta dish 😁.

  2. Looks delicious! I didn’t know what rotel was until your post. Now I know. And good idea to use taco seasoning.

    Very interesting to see you cook the spaghetti noodles in the same pot as the sauce. I always do it separately but I guess this makes a log of sense too. And saves one dish to wash!

    • Surprisingly not much at all. If I make something spicy the grandkids complain and they both loved this. It could definitely be made spicier but this was perfect for us. You could use one can of Rotel instead of two or not use Rotel at all to make it mild.

  3. That sounds good! I may have to try that. I have to get out of my head first though – I hear “spaghetti” and I get excited for the Italian version, lol.
