Cinnamon Flop Brunch Cake

A basic homemade cake with a cinnamon, brown sugar and butter topping then drizzled with icing. You can even add chopped walnuts or pecans for even more deliciousness. This one will disappear so fast!

Grease a 9” x 13” baking pan with cooking oil.

In a large bowl add the flour, granulated sugar,

milk, vanilla, baking powder, salt and egg. Mix

just until combined being careful not to overmix.

Pour evenly into the prepared baking pan.

Spread brown sugar and sprinkle the

cinnamon on top. If desired sprinkle nuts on too.

Drizzle melted butter on top.

Bake for 30 minutes in a preheated 350 degree

oven or until the center is done. Place dish

on a cooling rack and let cool completely.

Whisk together the icing ingredients

and drizzle over the cooled cake.

Ingredients

Cake Ingredients:

  • 2 cups all purpose flour
  • 1¼ cups granulated sugar
  • 1¼ cups milk
  • 2 tsp. vanilla extract
  • 3 tsp. baking powder
  • ¼ tsp. salt
  • 1 large egg

Cinnamon Sugar Topping Ingredients:

  • ¾ cup light brown sugar, firmly packed
  • 2-3 tsp. cinnamon (I sprinkled the top with the amount I wanted)
  • ¼ cup melted butter
  • chopped walnuts or pecans (optional)

Icing Ingredients:

  • 1 cup confectioners sugar
  • 1 Tbsp. butter, melted and cooled
  • ½ tsp. vanilla extract
  • 1/8 tsp. salt
  • 2-3 Tbsp. milk (enough to make a drizzle consistency)

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 9″ x 13″ baking pan with cooking oil.
  3. In a large bowl add all of the cake ingredients and mix just until combined. Do not overmix.
  4. Pour evenly into the prepared baking pan.
  5. Sprinkle brown sugar over the top.
  6. Sprinkle cinnamon on top. I didn’t measure I just sprinkled it all over the top.
  7. Sprinkle nuts on top (optional).
  8. Drizzle butter all over the top.
  9. Bake for 30 minutes or until the center is done. Cool completely on a cooling rack.
  10. In a small bowl whisk together the icing ingredients then drizzle over the top of the cooled cake.
