Apple Enchiladas

If you love Apple Pie or Apple Dumplings than you will love these Apple Enchiladas too. Instead of all the work there is in making the pastry dough, you just spoon the Apple Pie filling onto a tortilla and roll it up. Make a simple syrup and pour it over the tortillas then bake and serve warm or at room temperature. These are so easy even a beginner cook can make these.

  1. As I’m reading it and thinking how nice this is I read: “These are so easy even a beginner cook can make these.” There is hope for me … these do look delicious.

      • Good to know Diane – I actually bought a can of cherry filling and a yellow cake mix because somewhere in the easy crockpot recipes, I saw you could make a cake in the crockpot just using cake mix and cherry filling – thought maybe I’d make it for a holiday, though it might make too much. I saved the recipe, not sure where though. So this might be an option.

      • Now the oven is a whole ‘nother story. 🙂 I’m kind of skeptical about making the cake in the crockpot, but I’ll give it a whirl. And, I bought a box of Bisquick because I have a recipe that does not require refrigerated biscuits but Bisquick to make chicken and dumplings (they call them dumplings … I’d call it biscuits). 🙂
