Zucchini Bread

I have made this delicious Zucchini Bread for decades. Nobody will believe it has zucchini in it. I usually make multiple loaves and freeze them for up to a year. This recipe makes two loaves.

  1. Looks great, Diane! I imagine you must have at least one separate freezer in your house for all your work! πŸ™‚

    • Of course….hahahaha Two full size refrigerators with small freezers and a chest style freezer. I’m starting to panic because I have a side of beef coming in November and my big freezer is full!

  2. I love zucchini bread! It’s one of my mother’s signature items (along with pumpkin and poppy seed bread). Like you, she bakes a lot at once and freezes it for later, so she has bread at every family gathering.

  3. I had a co-worker years ago who had a huge garden and would bake zucchini bread and bring it in around this time of year – she remarked once “would you guys prefer this, or that I bring in a bag or two of zucchinis to pass around and you can take them home?” Zucchini bread won out as you might suspect.

  4. Thank you for the recipe, this is the first time I have heard of such bread. πŸ™‚
    best regards

  5. Looks delicious.😊 This recipe brings back so many memories. My Mother used to made us Zucchini bread every summer. I don’t like Zucchini as a vegetable, but as bread – delicious. πŸ˜ŠπŸ‘£
