Zucchini Pizza Bites

Sliced Zucchini topped with pizza sauce, sausage, pepperoni, mushroom or whatever is your favorite topping. Add shredded mozzarella cheese to the top with fresh basil and bake in the oven. This is my new favorite Zucchini recipe and we made a meal out of it.

Spray a large baking sheet with cooking oil.

Place the sliced zucchini flat on the pan.

Place about 1 Tbsp. pizza sauce on top of each slice of zucchini.

Add the meat or vegetable toppings.

Add the cheese.

Add the chopped basil. Bake in a preheated 450 degree oven for 5-10 minutes or until the zucchini is soft.

Turn the oven off and the broiler on. Broil for about 5 minutes or until the cheese is melted and starts to brown. Serve immediately.

Ingredients

  • 1 medium zucchini, with skin & sliced 1/4″ thick
  • 1 – 15 oz. can pizza sauce
  • 1 cup pepperoni, cooked sausage, cooked bacon (your favorite)
  • 8 oz. shredded mozzarella cheese
  • 1 cup chopped fresh basil

Directions

  1. Preheat oven to 450 degrees.
  2. Spray a large baking sheet with cooking oil.
  3. Place the sliced zucchini flat on the baking sheet.
  4. Spread about 1 Tbsp. pizza sauce on top of the sliced zucchini.
  5. Add your favorite toppings like cooked sausage, cooked bacon, pepperoni, mushrooms etc.
  6. Sprinkle the cheese on top.
  7. Sprinkle the chopped basil on top.
  8. Bake for 5-10 minutes or until the zucchini is soft.
  9. Turn oven off and the broiler on. Broil another 5 minutes or until the cheese is melted and starts to brown. 
  10. Serve immediately.

    • Thank you we loved them. I did figure it out but not the block editor. Thanks to all the support from my fellow bloggers I found the new classic way. It is still challenging but It will get easier I’m sure.

    • Thank you Nancy! My blood pressure is through the roof. I did my post last night and saved it and tomorrow it was gone. I typed a new one and posted it immediately today because I thought I would lose it. How do you bring up a saved post?

    • Thanks it was delicious and yes it’s a start Betty. So much more to learn. I actually tied into the new classic editor but it is still different from the other classic version. At least it works. I still don’t think I could figure out the Block editor without weeks of learning.

  3. Diane, how do you save the post? I don’t see any save button anywhere, and could not figure out how to exit from the post either? I just got switched tonight and had a post already drafted for tomorrow…..

    • That happened to me too Joni. It deleted mine when I tried to save it. You have to make sure you are in the old classic at all times. If you click the plus the the left side has a search. Type classic and click on the box below that says classic. Then you should see the save draft and preview like before. I hope I am telling you right I just learned this today. It has been a lot of trial and error. I still have no idea how to do the new block way. Thank God they left most of the classic alone but it is still challenging for me.

      • Thanks Diane…..I’ll try and post my blog tonight. I never worked with the old classic, just the one they are retiring, as I’ve only been blogging for 3 years.

      • Me too I started in Feb. 2017 so if I can do it so can you. Go to my post WP Editor and read all of they comments. That was the only way I figured it out. There is some great advice and links on there that will help you to.

      • Thanks Diane…..the H.E. gave me some tutorial links but it’s another blue sky day so I don’t want to waste it inside…..I’ll save them for a rainy day. I had a few drafts ahead and they had already converted them to classic for me, so it was okay. The test will come when I have to write a new post.

  4. Zucchini is so versatile but you either love it or hate it. Great just lightly fried and put over linguini with marinara. Could also be stuffed. This is one I never thought of though, and it looks great!

  5. Yummy looking and I must confess that before year end, I will make and eat pizza from the slow cooker. 🙂 This just fuels the fire to make them … maybe for the holidays. This is great for people on low-carb diets … no bread.

    • I had a follower ask me to make a vegetarian recipe. I know nothing about eating vegan or vegetarian. However, I thought this was about as close as it gets if they leave the meat topping off and just use veggies. Definitely a low carb recipe for sure.

      • I don’t know about vegan diets/meals either … it is really restricted and without using any animal products, I think you’d be hard-pressed to make a lot of dishes with no milk or eggs.
        On another note, we had a 3.4 magnitude earthquake in Monroe at 6:55 p.m. tonight. I live maybe 12 miles from there but I thought someone was at my side door as I felt it rattle … that’s what happened the last minor earthquake we had in 2018 (3.6). Yikes.

      • The one we had in 2018 was a 3.6 magnitude and originated from Amherstberg, Ontario and that was even closer … I felt the rumble under my feet. That earthquake, this earthquake and the meteor strike I was sitting in the same position, here at the kitchen table at my laptop – in each instance the screen door rattled … it was not dark yet her yesterday, but the other two times it was dark and I thought someone was tampering with the doors, maybe trying to break in. This was not so intense, but when I went to Lake Erie Metropark, since that’s not far from last night’s earthquake, I didn’t stand too close to the shoreline in case it rumbled and a the shoreline moved and I fell into Lake Erie. I don’t know how to swim!

      • One hurricane is lessening a little. I just read today that we are ripe for severe weather through Fall as we’ll stay warm … I was happy that tornado season is over … meteorologist said “not necessarily over” and my weather alarm went off at 3:00 today with a severe weather warning for 3:45 p.m. It fizzled before it got here thankfully. We have a stormy week/weekend (maybe weekend too).

      • I hope so too Diane … my comfort level went way down hearing that this heat is lasting til Fall and ripe for tornadic weather. Let’s move onto 2021 please, even if it means Winter!

      • I will send you pictures and directions – hopefully it turns out. I have found two different recipes and one is using Pillsbury crescent roll dough and one is Pillsbury biscuit dough. I have been studying the Facebook Crock Pot Sites – although yesterday they changed Facebook’s interface … it is as bad as your experience with WordPress. I don’t like the new Facebook. Now whether it is because I’m viewing it on Windows 7, I don’t know, but I find it big and stretched out, hard to see. So this is the recipe – I don’t want to send you the link as it has ads that will both you – this is a YouTube video (it’s long but gives step-by-step which is good for me) … the recipe link is below that.       • I am more of a crispy crust pizza lover, so I’ve seen the crescent roll recipe too. The video made it look easy – I need easy. 🙂 It will be later this year when I have gotten used to the slow cooker and am more comfortable with it – also when the weather turns bad, I think I’ll be using it more. Like now, I would not “start” a meal in the morning as I’d go out to walk. I have to tell you that I am not sure I want to leave the house with it on. I’d only use it when I was home.

      • That use to make me nervous too but they are very safely made today compared to when they first came out. I don’t think I have ever heard of a house catching fire from one. My Ninja slow cooker actually shuts itself off after the time I set is finished.

      • OK, I feel better about that then – I figured I’d only use it on weekends and if it rained or snowed and I did not go out walking. Next weekend I will open it up, wash it and christen it. I went out both days as it was good weather, albeit it sickening hot.

      • I don’t know how you can walk in this heat. I don’t even leave the house until after supper. I live for A/C. My thermostat goes from A/C to heat a day apart…lol

      • Well, I have to admit that the heat really did me in this past weekend – it was hot for a long trek like I did both days. The worst was two weeks ago when I went to Crosswinds Marsh and it was crowded on the wooden overlooks over the marsh so I went to the woods to hike around there … I got lost bigtime. I was so hot and glad to plop down in the car and rejuvenate with the A/C and I had no A/C. I had to drive home (35-40 minutes, temps close to 90) with no A/C.
