Easy Peach Crisp

 

Easy Peach Crisp made with fresh or frozen peaches and topped with a crumb topping. Serve warm with vanilla ice cream (optional) for a wonderful dessert.

Place the sliced peaches evenly

into the bottom of an 8″ by 8″

baking dish.

In a medium bowl add the flour, brown

sugar, cold butter, cinnamon and salt.

Using a pastry blender cut the butter into the

dry ingredients until small pea size balls form.

Add the oats.

Toss with a fork until oats are mixed in.

Pour mixture evenly on top of the

peaches and press it lightly into the peaches.

Bake in a preheated 350 degree oven for

35 minutes or until the top is golden brown.

Ingredients

  • 4 cups sliced peaches, fresh or frozen
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup cold butter
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup minute quick oats, uncooked

Directions

  1. Preheat oven to 350 degrees.
  2. Place the sliced peaches evenly in the bottom of an 8″ x 8″ baking dish.
  3. In a medium bowl combine the flour, brown sugar, cold butter, cinnamon and salt.
  4. Using a pastry blender cut the butter into the dry ingredients until small balls form.
  5. Add the oats and toss with a fork until combined.
  6. Pour mixture evenly on top of the peaches. Lightly press it into the peaches.
  7. Bake for 35 minutes or until the top is golden brown.
  8. Serve warm with vanilla ice cream (optional) or at room temperature.

      • Oh yes and this weekend I have all three grandkids! I just made frozen peanut butter pie for Sunday when my son and daughter in law come for dinner and tomorrow I am making Gorilla bites for the kids. Another busy weekend. Then the next weekend my parents are moving back from Florida. I found a condo house for them and they move in on the 19th when I drive to Cleveland to pick them up. The rest of the week will be unpacking them and getting them settled in. I’m already exhausted! 😂

      • Good thing you are retired Diane! Well, moving back from Florida is good for you as you’ll get to see them more. Were your parents worried about living there with the hurricanes and now the COVID crisis? You’ll be having them over for dinner now – a full house, especially when the grandchildren are over. You sure have a busy life and still had time to make Gorilla Bites and I had to Google to see what they were – hmm, they look good and no cooking (great, since the laptop is still on the stove, not on Windows 10 yet). I think you’ll need those Gorilla Bites to give energy to yourself!

      • My parents have been through 2 hurricanes that hit them directly. One was Charlie that hit land at Punta Gorda where they lived at that time. Very scary for them and us. They are moving back due to age. I can’t wait until you retire to see what you cook! I can’t believe you still don’t have Windows 10 and yes I did need the gorilla bites for energy…lol The kids were very good and played well together. Another weekend with them all in August!

      • It will be nice for them to live close to you for visiting, especially since you are now retired. And they can visit their grandchildren. I’d be worried about the hurricanes and also this pandemic as it’s hitting Florida so hard. I hope to try new things when retired and I look forward to having more time to learn how to do a lot of things, or enjoy things like hobbies, or reading, that I put off doing now. Our computer guy is really dragging his feet on this … I have nowhere to put that laptop and it is bigger than this one. I don’t have that many plugs – it is a real problem.
