Blueberry Dump Cake

Have you ever made a dump cake? I swore I would never make one because they always look awful on top, however, I have a freezer full of my homegrown blueberries from last year that I wanted to use up so I broke down and tried my first one.

It was definitely easy to make but I still didn’t expect it to turn out, especially when it said to dump the dry cake mix over the blueberries and drizzle the butter on top. That left the dry cake mix topping, well, dry! There wasn’t enough butter to cover the entire top of dry cake mix so I tilted the pan back and forth until it covered as much as it could. There were still dry spots and it still didn’t look promising.

When the timer went off I opened the oven door and thought it was the most unappealing cake I have ever seen and that I would never serve something like this to a guest. On top of that, it wasn’t a cake at all, more like a blueberry crisp and the parts the butter didn’t cover was still dry cake mix! (UPDATE: A fellow blogger said they use more butter than this recipe originally stated so I put the correct amount on the recipe card. This should correct the dry cake mix problem.)

I had envisioned a white cake with all of my blueberries going through it. Instead the blueberries stayed on the bottom and turned into a delicious jellied like consistency. My granddaughter said it best, it tasted like blueberry jelly and was it good!

Now for the topping, when I bit into the topping the powdered cake mix was awful to eat. It had the consistency of a crumb like topping and was way too sweet. The parts that had the butter did crisp up somewhat but the parts without the butter was like eating dry cake mix. The recipe said “do not mix” just pour the butter on top….hmmmm.

My granddaughter said she mixed hers up and it tasted much better that way. I thought that was a great idea so I did too. It definitely helped the taste of the topping and the jellied blueberries were already delicious.

I scooped all the leftovers out of the pan and mixed it with a spoon in a bowl with a cover, then I refrigerated it. I didn’t want to pitch it because I hate waste and it takes a long time picking my homegrown blueberries.

Later that night I decided to try it again and I was shocked at how delicious it tasted. There wasn’t any dry cake mix left and the topping didn’t taste as sweet due to mixing it all together.

Will I make a dump cake again, no way! I will stick to my original and normal way of baking. I will post the recipe below and if you decide to try it, or if you have a hint to make the topping better, let me know what you did. All the dump cakes I have seen on Facebook, the topping always looks so bad even though in the end it tasted good.

Ingredients

If using frozen blueberries, microwave

them on high for 2 minutes to thaw.

In a large bowl add the blueberries,

sugar and cinnamon.

Toss until the blueberries are all coated.

Spray a 9″ x 13″ oven safe

dish with cooking oil.

Pour the berries into the dish.

Pour the dry cake mix evenly over the top.

Melt the butter in the microwave.

Drizzle the melted butter over the top

then tilt the pan so the butter covers as

much of the dry cake mix as you can.

Bake in a preheated 350 degree oven for

35 minutes or until the top is golden brown.

Cut into serving size pieces and serve.

Top with vanilla ice cream if you want.

 

Blueberry Dump Cake

Ingredients

  • 1 box yellow cake mix (I used white)
  • 4 cups blueberries (fresh or frozen)
  • 1/2 cup granulated sugar
  • 1 cup butter (2 sticks)
  • 1 tsp. ground cinnamon

Directions

  1. Preheat oven to 350 degrees.
  2. If using frozen blueberries, pour them into a bowl and microwave on high for 2 minutes.
  3. Add the sugar and cinnamon to the blueberries then carefully toss well.
  4. Spray a 9″ x 13″ baking dish with cooking oil.
  5. Pour the blueberries into the baking dish.
  6. Pour the dry cake mix over the top.
  7. Melt the butter in the microwave. Drizzle the butter over the dry cake mix. Do not mix but tilt the dish to get as much of the butter to cover the dry cake mix as possible.
  8. Bake for 35 minutes or until the topping is golden brown.
  9. Cut into serving size pieces and serve with vanilla ice cream on top if you want.

  2. You may not like how it looks but it’s the taste that matters and frankly, it looks delicious. I never tried a dump cake either unless you count all of my mother’s marble cakes that stuck to the pan. 😅😅

  3. My pumpkin dump cake calls for 1 cup of melted butter, so there is no dry cake mix. If I make this, I will use more butter for sure.

    • I updated the butter in the recipe. Another blogger told me they always use 1 cup of butter, not 1/2 cup. That would make all the difference. Thanks Michelle!

  6. I’ve never had dump cake before … I remember people used to take jello and pour it into holes that they would poke into the cake – maybe called poke cake?

      • I remember seeing people bring it in for parties at work – white cake with rainbow stripes. No, I am not near any of that flooding thankfully. It is 140 miles from where I live, but it is just incredible when you see the pictures isn’t it? I think it has now crested but will still be at flood stage through Sunday.

    So I wonder how this would taste with coconut flour or
    Almond flour and some stevia or xylitol – if I make this version I will

  10. Dump cake? I’ve heard of cake, cupcakes, and upside down cake, and even spider-cake, but never a dump cake! Honestly I don’t think I would ever try it, you know how I am about trying foods!

    • It really did taste delicious after I mixed the topping in. The blueberry bottom was amazing. I also had someone give me advice to make the topping better…more butter! So I changed the recipe to double the butter. Thank you for your comment and you’re welcome!

  11. Your cake looks so good! I made a dump cake for a friend’s birthday (we’d been joking about making one for quite some time, so his birthday was the perfect time to actually do it). The recipe I followed called for so many strawberries, that we ended up with cake stew! Now I love strawberries, but it was almost sickening to eat. Very disappointing. 🙁

    • My first dump cake as well Shauna. Although I thought the topping looked unappealing it tasted great once I mixed the topping in with the blueberry filling. Too bad the strawberry one didn’t turn out. Thank you Shauna!

  12. I’ve always been put off by the name- “dump” cake isn’t exactly appealing, but now it seems they might not turn out that well, either. I think I’ll just stick with regular baking too. I don’t blame you for not wanting to waste the berries, though.

    • Yes this would have been amazing without the cake! I actually mixed my blueberries etc. in a separate bowl. The recipe I used said to dump blueberries etc. into the baking dish then dump on the cake mix. I’m with you, I will bake my normal way.
