Rotini Pizza Casserole

Pasta, pizza sauce, sausage or ground beef, pepperoni and any of the delicious pizza toppings you love. Top all that flavor with cheese and bake for an amazing tasting meal.

Ingredients

Cook the pasta according to the

package directions then drain well.

Return pasta to the pan.

In a large skillet add the sausage,

onion and any other vegetables

like green pepper, mushrooms etc.

Cook until the sausage is completely

cooked through and the vegetables

are tender. Drain any fat.

In a large bowl add the sausage,

pizza sauce, soup and Italian seasoning.

Stir to combine.

Pour sauce into the pasta.

Toss to combine.

Spray a 4 quart casserole

dish with cooking oil.

Pour 1/3 of the pasta mixture

into the casserole dish.

Top with 1/3 of the pepperoni.

Repeat layers two more times until gone.

Top with all of the cheese.

Cover and bake in a 350 degree

preheated oven for 35 minutes.

Remove from the oven and take the lid off.

Turn on the broiler and put the casserole dish,

uncovered, under the broiler until the cheese

starts to brown, watching it carefully.

Place in a bowl then serve.

Rotini Pizza Casserole

Ingredients

  • 1# Rotini pasta
  • 1# Italian sausage, hot or mild (your favorite) or ground beef
  • 1 small onion, diced
  • 1/2 cup each green pepper, mushrooms, bacon or any of your favorite pizza toppings (optional)
  • 30 oz. (2 – 15 oz. cans) pizza sauce
  • 10.5 oz. can cream of mushroom soup
  • 1/2 tsp Italian seasonings
  • 6 oz. sliced pepperoni
  • 8 oz. shredded mozzarella cheese

Directions

  1. Preheat oven to 350 degrees.
  2. In a large pot cook the pasta according to the package directions. Drain well and return to the pot.
  3. In a large skillet over medium heat cook the sausage (or ground beef), onions and any other vegetables until the sausage is completely cooked and the vegetable’s are tender. Remove from the heat.
  4. In a large bowl combine the sausage, pizza sauce, soup and Italian seasonings.
  5. Pour the sauce mixture over the pasta and toss to combine.
  6. Spray a 4 quart casserole dish with cooking oil.
  7. Pour 1/3 of the pasta into the casserole dish. Top with 1/3 of the pepperoni.
  8. Repeat step 7 two more times until all used up.
  9. Top with all of the cheese and cover with a lid.
  10. Bake for 35 minutes then remove from the oven. Take the lid off.
  11. Turn the broiler on. Broil, watching carefully, until the cheese starts to brown then serve.

  2. Dangerously addictive. You can only use up all the calories like if you’re working in a coal mine or loading railcars by hand.

    • I have made it both ways and both are good. We have grown to love the hot Italian sausage. With the grandkids here I didn’t think they would like the spiciness but they did. You can even use ground turkey or ground chicken.

      • Diane, I will be keeping my blog updated as often as is possible. It will take time because of the peppers needing to grow, however, I hope that you have been enjoying my current posts.

      • Diane, I have some peppers that I will need to work on growing. When the peppers appear, which will probably be soon, I will post a lot more. Stay tuned. When I said as often as is possible, I was speaking to the fact that my peppers will need growing time. By the time they are ready, many more posts will be coming.

  3. My recipe is probably the easiest thing in the world short of opening a can of something. It’s called FRIED SPAGHETTI (but you can use any leftover pasta; no one will rat you out!). Ingredients: leftover pasta in plain tomato sauce or meat sauce; EVOO and minced garlic (garlic salt will do in a pinch). In a heavy skillet heat just enough oil to cover the bottom of the pan. Add as much or as little garlic as you like and let it saute until it’s golden brown. Add your pasta and heat it thoroughly on medium heat. I move mine around with a wooden spoon or spatula as it’s heating because I’m making fried spaghetti (pasta) – not a frittata. I don’t want it all stuck together. Serve with a side salad, Italian bread and red wine. Delizioso (especially the parts that get a little crispy)!!!
