Chicken Pot Pie Biscuits
Biscuit dough formed into a muffin pan, filled with chicken pot pie filling then baked in the oven. If you want to you can top with cheese after they bake & melt the cheese in the oven. This is a delicious and fun way to eat your vegetables. They are even delicious heated up in the microwave the next day for a great grab and go meal.
Ingredients
Spray a 12 cup muffin pan with cooking
oil then take a paper towel and wipe
out each hole leaving a very
thin coating on each hole.
Take the dough out of the can and
squeeze it together. Cut it into
12 equal pieces and roll into balls.
Place the balls into the muffin holes.
Press the dough onto the bottom
and up the sides of each hole.
In a medium bowl combine the rest of
the ingredients EXCEPT for the cheese.
Using a spoon evenly place all
of the filling into the muffin cups.
Bake in a preheated 400 degree
oven for 12 – 15 minutes until biscuits
are a golden brown and serve.
Or sprinkle with the cheese and
place back into the hot oven
until the cheese melts.
Then serve.

Ingredients
- 1 can 8 count biscuits
- 1 cup cooked & shredded chicken
- 1½ cups frozen mixed vegetables, thawed
- 1 tsp dried minced onion
- 1/8 tsp salt
- 1/4 tsp pepper
- 1 – 10.5 oz. can cream of chicken soup
- 1 Tbsp. dried parsley
- 2/3 cup shredded cheddar cheese, optional
Directions
- Preheat oven to 400 degrees.
- Spray a 12 cup muffin pan with cooking spray. Using a paper towel wipe off each hole leaving a thin coating on each hole.
- Remove the dough from the can and squeeze it together. Using a knife, cut it into 12 equal pieces then roll them into balls.
- Place a ball into each hole in the pan. Press the dough onto the bottom and up the sides of each hole.
- In a medium bowl combine the rest of the ingredients EXCEPT for the cheese.
- Using a spoon place all of the filling equally into each muffin hole pressing it down to fit.
- Bake for 12 – 15 minutes or until the biscuits are golden brown then carefully remove them with a fork and serve.
- OPTIONAL: If you would like cheese on top, sprinkle it on top of the biscuits when then are finished baking and place back into the oven until the cheese melts, about 1 minute.
