Herbed Carrots
A nice change to your normal carrots by adding melted butter and herbs. Cook the frozen carrots according to the package while the herbs flavor the melted butter.
Ingredients
Melt the butter most of the way
then remove from the heat. Add the
salt, pepper, rosemary and thyme.
Stir and set aside.
Cook the carrots according to
the package directions.
Drain the carrots.
Pour the carrots back into the hot pan.
Pour the herbed butter over the carrots.
Toss and serve.

- ½ cup butter, 1 stick
- ½ tsp dried thyme
- ½ tsp dried rosemary
- ¼ tsp salt
- ¼ tsp pepper

- Cook the frozen sliced carrots according to the package directions.
- Drain the carrots and return to the hot pan.
- Add the butter to the carrots, toss then serve.

Yes good but ill give you my recipe if you wish .Sunshine carrots .Boil in orange juice add bit of flour and about table spoon of brown sugar. Stir and thickens ready to serve with bread sauce and roast chicken or even pan fried pork chops. Victorian recipe from farmhouse gardeners wife long ago in space and time.

Know I’d love them. Rosemary and Thyme are my favourite herbs… Fresh or dried!
I use them all the time too. I grow them in the garden and can’t let any go to waste so I dehydrate them for winter.

We love to honey glaze our carrots. My grandson’s favorite way to eat them other than fresh from the garden – lol.

We have a deal with a Keeper from AZ. He uses our field(central location) to come up in the spring and distribute 600 colonies. He leaves one hive on our place. The rest through 8 counties. In tge fall they gather them all up, we get a free case of fresh raw honey and they head back home for winter.

We have a great central spot and a close friend is partners with a guy from AZ. Every spring he comes up and sets up in our field. A couple of semi’s carrying over 600 colonies of bees sits on our property for 3 days. He brings in smaller trucks to move the colonies to about 8 different counties here in east/northeast Colorado. Its loads of fun every year watching them. I got to see a “swarm” up close and find out why, how, and how long it all happens. I garden and have bees resting on my arms/legs (the bee guy says they like human sweat?! haha). I have never been afraid of them and so love that they hang out here all summer long. In the late fall (before the deep frost) they will come and collect them all (just doing the reverse from spring) to head back to AZ for the winter. We get a HUGE case of fresh, raw honey for giving them a place to work from. We also have all the pollinating we can handle – LOL.

I just started growing some. If you have any tips I would appreciate it!
We grew them years ago and never could get them to grow very big. The soil has to be fertile and turned very well. When you plant them, don’t plant them all at once. Continue planting more seeds about every 2-3 weeks until about mid summer. Good luck!
That sounds wonderful, Diane. I think the butter and herbs will provide a nice counterpoint to the sweetness of the carrots. Any suggestions for how long I should steam the carrots if I use raw ones?
It should only take 5-10 minutes once the steam starts depending on their size Tanja. Just test them with a fork.
