Mini Cherry Pies

Do you love Cherry Pie but you can’t make the dough or an entire pie comfortably? Or maybe you just want some quick finger food for a party. Making these Mini Cherry Pies with only two ingredients and some optional whipped cream topping or ice cream is so simple.

*You can also make your own pie dough if you don’t want to use the store dough.*

Ingredients

Open the packages of pie dough

and unroll onto a clean dry surface.

Cut as many 3” circles as

you can from the dough.

Discard leftover dough.

Place the dough circles into a

ungreased mini cupcake pan making

them fit by fluting the sides. Form it into

the pan gently and do not push it onto the

pan. Fill the holes with cherry pie filling.

Bake at 425 degrees for 14 – 18 minutes

or until the crust top is light brown

and the filling is bubbly.

Top with optional whipped cream or

a small scoop of ice cream then serve.

 

Mini Cherry Pies

Ingredients

  • 1 – 21 oz. can cherry pie filling
  • 1 box Pillsbury Pie Crusts (2 crusts in the box), or make your own
  • whipped cream or ice cream, optional

Directions

  1. Preheat oven to 425 degrees.
  2. Take both pie dough packages out of the box and open the bags.
  3. Unroll the first pie dough onto a clean flat surface. Cut as many 3″ circles as you can from the dough. Discard any leftovers. Repeat with the other dough.
  4. Place each circle of dough gently into the ungreased mini cupcake pan. Do not press the dough onto the pan or it will stick. Flute the sides of the dough to make it fit.
  5. Fill the centers of each one with the pie filling making sure there are cherries in each hole.
  6. Bake for 14 – 18 minutes until the crust is a light brown and the filling is bubbly.
  7. Let the mini pies cool in the pan for 5 minutes then carefully use a thin knife to pop the pies out of the pan.
  8. Serve with whipped cream or ice cream (optional).

  1. Extra dough can be sprinkled with cinnamon sugar and baked along with (or after) the pies as a special treat for grandchildren – or ME! ;->

  2. Nooooooooo, Diane!!!! Ugh. I have a can of cherry pie filling in the pantry but I JUST used the leftover Pillsbury pie crust 2 days ago in an attempt to make cinnamon roll ups. They didn’t turn out good so I dumped them in the trash. Now I wish I still had that crust so I could run in and make these mini cherry pies. :sadpandaface:

    I will add another crust to my shopping list.

      • I was at the grocery store yesterday and walked away from my cart and when I returned there was an Krispy Kreme mini cherry pie up in the top where the handle is. I guess someone mistook it for my cart, but I wondered if it was meant to be … I was good and didn’t keep it but got some cookies instead … must have treats for Fat Tuesday (02/25).

      • I would have taken it as a sign to keep it!!!! Krispy Kreme’s are my absolute favorite donuts!!!!! I don’t not have an off button so they can’t come to my house unless it is only one!!!

    • Thank you! No it is a flat roll up sheet and when the camera sees it the flowers look real with dimension!!! I bought a bunch of different ones. 90% of all my backgrounds are these and so much fun to use. Even the wood looking ones appear real in the camera.

  3. Ok, I just need to make sure…a mini cupcake pan not a regular cupcake pan. In my mind, 3″ seems so large for a mini cupcake hole! And I’m going to make them tomorrow for the big game!
