Cheesy Beef Enchilada Dip

What a delicious appetizer for your Super Bowl party! Ground beef, onion and garlic cooked and then you add enchilada sauce, green chilies and cheese. If that isn’t delicious enough, it gets topped with more cheese, olives and sour cream. Use tortilla chips, our favorite is Scoops, to enjoy this fabulous appetizer!

Ingredients

In a large skillet over medium heat,

add the ground beef, onion and garlic.

Cook over medium heat until the

onion is tender and no pink

remains in the ground beef.

Discard excess grease.

Add the enchilada sauce, green

chilies and half of the cheese.

Continue to cook, stirring frequently,

until the cheese melts and mixture

thickens, about 3-5 minutes.

Place the mixture into a 1 quart

oven safe casserole dish.

Top with remaining cheese.

Place under the broiler, on the second

oven rack, until the cheese melts.

Top with olives, cilantro and sour

cream (optional) then serve hot.

 

Cheesy Beef Enchilada Dip

Ingredients

  • 1# ground beef
  • 1 small onion, diced
  • 1 clove garlic, diced
  • 2 – 10 oz. cans red enchilada sauce
  • 1 – 4 oz. can diced green chilies
  • 2 cups shredded cheddar cheese, divided in half
  • pepper to taste
  • salt to taste, optional as it was salty enough for us
  • 1/2 cup sliced black olives
  • sour cream, for topping
  • cilantro, for garnish
  • 1 bag tortilla chips or Scoops

Directions

  1. In a large skillet over medium heat cook the onion, garlic and ground beef until the onion is tender and the ground beef is no longer pink. Discard any grease.
  2. Add the enchilada sauce, green chilies and half of the cheese. Cook, stirring frequently, until the cheese melts and the mixture thickens, about 3-5 minutes.
  3. Place into a 1 quart oven safe baking dish.
  4. Top with remaining cheese.
  5. Broil on the second oven rack from the top until the cheese melts, watch it carefully.
  6. Remove from the oven and top with sliced olives, cilantro and optional sour cream.
  7. Serve hot with tortilla chips or Scoops.
