Ingredients

  • 1 large chicken breast
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup broccoli florets

This is the ingredients for one large chicken breast. If you make more than one increase ingredients by that amount.

Directions

  1. Preheat oven to 400 degrees.
  2. Place the chicken into a plastic bag and gently pound to an even thickness. Do not pound too thin or it will be difficult to make a pouch.
  3. Using a sharp knife, cut a pouch into the chicken from the thick end (not the side).
  4. Place the cheese and broccoli into the pouch. Depending on the size of your chicken breast the amount may vary.
  5. Using toothpicks, seal the end of the chicken enclosing the broccoli & cheese.
  6. Sprinkle half of the seasonings (1/4 tsp each) on the top side of the chicken.
  7. In a skillet over medium heat, melt the butter. Add the chicken, seasoned side down.
  8. Sprinkle the top with the remaining seasonings.
  9. Cook just until brown then turn over and brown other side. Keep in mind you are not cooking the chicken, only browning it.
  10. Place the chicken into a baking dish that has been sprayed with cooking oil. Carefully remove the toothpicks.
  11. Bake for 35 – 45 minutes or until the center of the chicken breast is 165 degrees. Check the temperature frequently or chicken may be overcooked and dry.
  12. Place on a serving plate and enjoy!

  1. FYI, for OCD compatibility, on the left handed chicken breast is it important to push the cheese to the right side and vise verse. Looks yummy though, if I could only find some meatless chicken…

  2. I didn’t eat breasts with broccoli, you surprised me with this recipe. I will try to do it because everyone likes broccoli. Thank you for the recipe.

    • Thank you that was the last one. I spent a day experimenting with stuffing chicken. I never dreamed they would turn out so good and be fun to make. Have a great weekend!
