Baked Chicken Parmesan Meatballs

These Baked Chicken Parmesan Meatballs have so much flavor we ate them plain. The grandkids ate theirs with BBQ sauce. However, feel free to add them to your favorite dish, with your favorite sauce or eat them right out of the oven like we did.

Ingredients

Line a baking pan with foil.

Using a pastry brush, generously

brush olive oil on top of the foil.

Add all of the ingredients to a large bowl.

Using your hands, mix until combined well.

Roll into 18 even size meatballs.

Brush the meatballs completely with olive oil.

Bake in a preheated 400 degree oven on the middle rack for about 35 minutes or until the meatballs are 160 degrees. Raise the oven rack up one level and turn oven to broil. Broil until the tops are golden brown and the internal temperature of the meatballs is at least 165 degrees then serve.

Ingredients

  • 1 pound ground chicken
  • 1 Tbsp. dehydrated minced onion
  • 1/2 cup grated Parmesan cheese (the kind in the jar)
  • 1/2 cup plain bread crumbs
  • 1 Tbsp. dried parsley
  • 1 clove garlic, minced
  • 1 tsp red pepper flakes, optional
  • 1 egg, whisked
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • olive oil (vegetable oil will work too)

Directions

  1. Preheat the oven to 400 degrees.
  2. Line a baking sheet with foil and brush generously with olive oil.
  3. In a large bowl add all of the ingredients.
  4. Mix well using your hands.
  5. Roll into 18 even size meatballs and place onto the prepared foil lined pan.
  6. Brush the meatballs completely with olive oil.
  7. Bake on the middle rack for about 35 minutes or until the internal temperature is 160 degrees.
  8. Turn the oven off and the broiler on. Raise the shelf up one level and broil meatballs until golden brown and at least 165 degrees internally. Do not over bake or they will be dry.
  9. Serve right out of the oven, add to your favorite dish or toss with your favorite sauce.

  1. Mmmm – and we have 5 lbs if chicken – might change the bread to pork rinds – we did that with thanksgiving stuffing and came out pretty good

  2. I love to bake meatballs. I think baking them gives them an excellent texture. I also love that you made these meatballs out of chicken! Chicken is my favorite protein!

  3. Another of your recipes I’ll have to try! I’ve never seen ground chicken in our grocery stores, so I may have to substitute ground turkey. Do you think that would work?

    • They turned out fantastic. I had ground chicken in the freezer and the grandkids were here so luckily this was a huge success! I think next time I will shape them into patties, that’s what I usually do but decided to try them as meatballs…winner winner chicken dinner!

        I made deer jerky today! Out of hamburger meat. I’m proud of it! I only used salt, pepper and hot sauce!

Or make a sandwich out of them (if your mouth is wide enough – if not, slice ’em in half) … I told you my grandma’s neighbor always brought down a big pot of spaghetti and meatballs whenever we visited her. I took my meatballs and put them on a cheesy kaiser roll (kaiser rolls are a Canadian treat, and are like a crusty baguette, a hard shell and soft inside and messy to eat and these were cheesy with the hunks of cheddar cheese baked right in … then put the meatballs in between with some tomato sauce – oh such joy for the mouth. 🙂

  6. This is probably weird of me, but I’ve never thought of chicken meatballs, probably because I’ve never bought ground chicken. I have made turkey meatballs, however. I wonder which is healthier: chicken or turkey. Do you happen to know offhand?
