Buffalo Chicken Salad

If you love Buffalo sauce like I do, try my Buffalo Chicken Salad. Packed full of Buffalo Chicken, lettuce, jalapeño pepper, green pepper, cherry tomatoes, Mexican shredded cheese and lime. You can add or remove any of the vegetables to make it to your own liking. There is so much flavor in the Buffalo Chicken it really doesn’t need a salad dressing, however, top it off with Ranch Dressing for even more flavor.

Ingredients

In a measuring cup add the hot

sauce, melted butter and oil.

Using a fork, whisk to combine.

Place the shredded chicken in a medium

bowl and pour the buffalo sauce on top.

Mix well then salt and pepper to taste.

Mix well making sure it is

completely combined.

Toss the lettuce with the chicken and

place on a plate. Add the green pepper,

tomatoes and jalapeño pepper.

Top with cheese and lime slices or

squeeze the lime juice over the salad.

You can also top with Ranch dressing

as it compliments the buffalo chicken.

 

Buffalo Chicken Salad

Ingredients

SAUCE INGREDIENTS:

  • 1 Tbsp. olive oil
  • 2 Tbsp. butter, melted
  • 1/4 cup hot sauce (I use Frank’s Hot Sauce)

SALAD INGREDIENTS:

  • 2 chicken breasts – cooked & shredded (I used rotisserie chicken)
  • salt to taste
  • pepper to taste
  • 2 hearts of Romaine lettuce, chopped
  • 1 jalapeño pepper, sliced
  • 1 small green or yellow pepper, sliced
  • 1 – 2 lime, sliced or use the juice to squeeze on top of the salad
  • 12 cherry tomatoes, sliced in half
  • 1 cup shredded Mexican cheese

Directions

  1. In a measuring cup add the hot sauce, melted butter and olive oil. Whisk with a fork.
  2. Place the shredded chicken into a medium bowl. Pour Buffalo Sauce over the chicken and mix well. Salt & pepper to your taste and mix well again.
  3. Toss the lettuce with the chicken and place on the plates.
  4. Add the green or yellow pepper, tomatoes and jalapeno pepper.
  5. Top with the cheese, lime or lime juice and optional Ranch Dressing.
