Cobb Salad

This Cobb Salad is full of bacon, chicken, eggs and vegetables then tossed with a homemade salad dressing that pairs perfectly with the Romaine lettuce. This made a fabulous meal.

In a small bowl whisk together the

Salad Dressing Ingredients, set aside.

Place the lettuce into a large bowl.

Pour 2/3rds of the salad dressing over

the lettuce and toss to combine.

Place the lettuce onto a large platter.

Place the rest of the salad ingredients

on top of the lettuce in rows.

Sprinkle the top with the cheese.

Pour the rest of the salad dressing

evenly over the top and serve.

Ingredients

SALAD DRESSING INGREDIENTS

  • 3 Tbsp. olive oil
  • 2 Tbsp red wine vinegar
  • 1 Tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • salt and pepper to taste

SALAD INGREDINETS

  • 2 Romaine hearts (rinsed, patted dry and sliced into bite size pieces)
  • 4 hard boiled eggs (cold, peeled and chopped)
  • 1 cup diced tomatoes
  • 8 oz. shredded cheddar cheese
  • 1/2 cup cooked & chopped bacon
  • 1 large cooked chicken breast, diced
  • 1 yellow or green pepper, diced
  • 1 small red onion, diced
  • 1 avocado (I didn’t use it)

Directions

SALAD DRESSING DIRECTIONS

  1. In a small bowl combine all of the salad dressing ingredients with a whisk and set aside.

SALAD DIRECTIONS

  1. Place the lettuce into a large bowl.
  2. Pour 2/3rds of the salad dressing over the lettuce and toss to combine.
  3. Place the lettuce onto a large serving platter.
  4. Place the rest of the salad ingredients on top of the lettuce in rows.
  5. Sprinkle the top with the cheese.
  6. Pour the rest of the salad dressing evenly over the top and serve.

  1. So this is what Cobb salad looks like? I remember hearing about it in an episode of Sex and the City.
