Cream Of Broccoli Soup
A delicious Cream of Broccoli Soup that cooks in about 10 minutes. Creamy, thick, full of flavor and sure to be a hit with anyone that loves broccoli.
Ingredients – Plus up to 1 cup milk
to add after soup has cooked
if it is too thick (optional).
In a large pot, add the Half & Half
then whisk in the cornstarch.
Add the remaining ingredients
except for the milk.
Stir and bring to a boil.
Turn to a simmer and simmer until the vegetables
are tender, about 5-10 minutes. Then, if the soup is too
thick for you, add up to 1 cup milk and stir.
Ladle into serving bowls and enjoy!

- 2 Tbsp powdered chicken bouillon
- 1 tsp dried basil
- 1 small onion, diced
- salt & pepper to taste
- 3 cups fresh broccoli, chopped small
Directions
- In a large pot add the Half & Half. Whisk in the cornstarch.
- Add the remaining ingredients, stir and bring to a boil over medium heat stirring frequently.
- Reduce to a simmer and cook for 5-7 minutes, stirring frequently, or until the broccoli and onion are tender.
- Optional: If the soup is too thick add up to 1 cup of milk.
- Place into serving bowls and enjoy!

Some years back I did not eat broccoli at all and now I’m eating it at least once per week π Very good! Great soup!
Years ago I lost 72# by eating a bunch for lunch everyday. My family hated me because of the smell in the house when it cooked. The nurses at my doctors office said they wanted my blood because it was so healthy! I swear it is a miracle vegetable…lol

How many will this serve?
We made a meal out of it and had 2 large bowls. You would get 4 normal size bowls from it.
I’ll definitely try this when the weather gets cooler!

I like cream of broccoli soup – broccoli is good for you, lots of calcium in it – surprising about that, but it is so.
It is so healthy! I used to eat it for lunch every day and my bloodwork was amazing!

my two favorite soups are cream of broccoli and pea soup. I mean three, home made chicken and noodle soup too.
I don’t think there is a soup I don’t like. My mom made split pea soup when I was a kid. I completely forgot about it. Thank you Mike.
