Amish Chicken Pot Pie & Dumplings

This delicious one skillet Amish Chicken Pot Pie with Dumplings meal is made on top of the stove. There is no canned soup in this one! These homemade dumplings are simple to add to the already easy Amish Chicken Pot Pie.

Ingredients

In a large deep skillet heat

the oil over medium heat.

Add the onion and chicken then stir.

Add the carrots and celery.

Stir everything together.

Cook covered, until the chicken is cooked through,

stirring frequently. This should take about 5 minutes.

Add the salt, pepper and thyme.

Add the chicken broth and bring to a boil.

Cover and simmer for about 5-10 minutes

or until the carrots are tender.

While the vegetables cook prepare the

dumplings. In a small bowl add the Bisquick

and 1/3 cup of milk. Whisk together with a

fork just until combined. Mixture will be thick.

In another small bowl whisk 1 & 1/2 cups

of milk with the cornstarch until combined.

Once the vegetables are tender,

stir in the cornstarch mixture.

Bring to a boil then add the peas.

Stir and bring back to a boil.

Boil one more minute.

Drop in the dumpling mixture by

tablespoons, keeping them apart.

Turn to a simmer, cover and simmer for

10 minutes or until the dumplings are done.

Amish Chicken Pot Pie & Dumplings

Ingredients

  • 1 & 1/2 pounds chicken breast, (boneless & skinless) cut into bite size pieces
  • 1 Tbsp. olive oil
  • 2 medium carrots, peeled and sliced thin
  • 1 medium stalk of celery, sliced thin
  • 1 medium onion, finely chopped
  • 2 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried thyme
  • 3 Tbsp. cornstarch
  • 1 & 1/2 cups milk
  • 1/3 cup milk
  • 1 cup baking mix, (such as Biscuick)
  • 1 cup frozen peas

Directions

  1. In a large deep skillet heat the oil over medium heat.
  2. Add the onion and chicken then stir.
  3. Add the carrots and celery then stir.
  4. Cook covered until the chicken is cooked through, stirring frequently. This will take about 5 minutes. Do not overcook the chcken.
  5. Stir in the salt, pepper and thyme.
  6. Add the chicken broth and bring to a boil. Cover and simmer for about 5-10 minutes or until the carrots are tender.
  7. While the vegetables are cooking, prepare the dumplings. In a small bowl whisk together the Bisquick and 1/3 cup of milk with a fork just until combined. Do not over mix. Mixture will be thick and sticky.
  8. In another small bowl, whisk 1 & 1/2 cup milk with the cornstarch until combined.
  9. Once the vegetables are tender, pour in the cornstarch mixture, stir and bring to a boil.
  10. Stir in the peas and bring back to a boil. Boil for one minute.
  11. Drop in the dumpling mixture by tablespoons keeping them from touching.
  12. Turn to a simmer, cover and cook for 10 minutes or until the dumplings are done.
  13. Place in a serving bowl and enjoy!

  2. Yum. I love the simplicity of one-pot meals. I’ve made the giant chocolate chip “cookie in a pan” you mentioned in another blog post. It was eaten by hungry (or is that greedy) children before it was even cool. They stood around the pan with their hands out. LOL When we were in Pennsylvania Amish country two years ago, I found it interesting that they called their chicken pastry: “chicken pie” not the usual “chicken pot pie” most of us have grown up calling it. https://suzanklassen.com/2017/08/28/amish-country/

    • I don’t blame them who doesn’t love a giant cookie…lol I read your wonderful Amish post. I never knew they didn’t call chicken pot pie that! I was shocked to see that the buggy rides run on Sundays. The Amish in Ohio reserve Sunday for God and family. I have noticed some of the food establishments being open on Sunday but then they aren’t totally staffed my the Amish or Mennonites. My husband and I visit Amish Country twice a year and I buy all the spices and herbs that I don’t grow myself from there. I actually go there with 2 coolers and ice packs…lol We love Lehman’s store where all the Amish household items are for sale….oil lamps, canning supplies, cheese making supplies etc. There is always Amish in there no matter what month we go.   3. I live in the UK and have never heard of Bisquick which I surmise is an instant dumpling mix of some sort. I am guessing that any other sort of instant dumpling mix would serve as well.
