Baked Okra


This Baked Okra recipe is so easy and it is the favorite Okra recipe that I make. I love this recipe because it is not fried and still tastes delicious. I also like this recipe with parmesan cheese added on top.

Baked Okra



  • 1# okra, rinsed clean and patted dry
  • Kosher salt to taste
  • pepper to taste
  • 3 Tbsp. olive oil


  1. Preheat oven to 450 degrees.
  2. Cut the ends off of the okra and slice the longer okra in two.
  3. Put okra into a shallow baking dish and drizzle olive oil over top. Mix making sure the okra is all coated in the oil.
  4. Let sit for 5 minutes then mix again.
  5. Sprinkle with salt and pepper.
  6. Bake uncovered for 15 minutes, or until cooked through, turning over halfway through.


  1. I love okra, Diane. I have a question about this recipe. My sister won’t eat okra if it is at all “slimey.” Does the baking process get rid of the “slimey” texture of the okra? If not, I’ll just have to make it for myself, won’t I? LOL!

    • I’m with your sister…hate the slime! I cook it until it is a light brown and then it gets rid of the slime. If you cut each piece in half after you cut the ends off that will make it even more slime proof. Maybe you should make a practice batch for you first….lol

  4. Hmm. I have never tried baking okra before. I’ve only sautéed it. I will have to try this!

  5. OK, Diane….love this. Try this easy fast fix too. Put fresh okra speared on plate, microwave for a two minutes with a touch of olive oil, salt and pepper. Makes you want to slap your Mama good!

  6. I will have to try this recipe, Diane. I have only eaten okra boiled in gumbo, but I like the idea of seasoning and baking it, and possibly eating it as a snack. Does it get crunchy?
