Microwave Cheesy Nacho Sliced Potatoes

My husband told me four times how delicious this was and believe me it really was! Potatoes smothered in cheese with jalapeño peppers (optional), tomato, green onion and topped with sour cream wasn’t good enough for me, I decided to microwave this potato dish in 15 minutes to make it simply perfect.

Ingredients

Slice the potatoes, jalapeño peppers

and green onions then dice the tomato.

Spray a 3 quart casserole

dish with cooking oil.

Place a layer of sliced potatoes on the

bottom with a few slices of jalapeño

pepper, salt and pepper to taste.

Top with some of the cheese.

Repeat the layers until ingredients

are used up, ending with the cheese.

Cover with a lid and microwave on high

for 15 minutes or until potatoes are soft.

Top with diced tomatoes

and sliced green onion.

Top with a spoonful of

sour cream and serve.

 

Microwave Cheesy Nacho Sliced Potatoes

Ingredients

  • 4 medium potatoes, peeled
  • 2 – 3 jalapeno peppers
  • 1 Italian tomato
  • 2 green onions
  • 8 oz shredded Mexican cheese, or your favorite
  • salt & pepper to taste
  • 1/2 cup sour cream

Directions

  1. Slice the potatoes, jalapeño peppers and green onions then dice the tomato.
  2. Spray a 3 quart casserole dish with cooking oil.
  3. Place a layer of sliced potatoes in the casserole dish. Sprinkle with salt & pepper to taste and add a few slices of jalapeno pepper. Top with a handful of cheese.
  4. Repeat layers, using up all of the ingredients, ending with the cheese.
  5. Cover with a lid and microwave on high for 15 minutes or until the potatoes are soft.
  6. Top with the diced tomatoes and sliced green onions.
  7. Place the sour cream in the center of the dish and serve.

    • Yes a microwave! Just make sure you cover the dish and don’t overbake the potatoes. I just kept checking the potatoes with a fork after 10 minutes and by 15 minutes they were perfect. Thanks Mickey!

  2. Due to circumstances will have all five grand-kids in one place for a few months so your quick and tasty recipes are being stored away for when I get there, might leave out the jalapeno for them though.
