Marinated Cherry Tomatoes

If you can’t decide what side dish to make with your meal, consider these delicious Marinated Cherry Tomatoes. You make them up a day ahead of time to marinade for a delicious side dish. The marinade makes for a wonderful tasting salad dressing as well. They will only take a few minutes to make, cherry tomatoes always taste great and are appealing to the eye so give them a try.

Ingredients

In a small bowl add the oil, vinegar, basil,

 green onions, salt, pepper and garlic.

Whisk together.

Add tomatoes and toss.

Refrigerate overnight or longer,

place on a serving dish and enjoy!

 

Marinated Cherry Tomatoes

Ingredients

  • 1 pint cherry tomatoes, stems removed (rinsed and dry)
  • 4 Tbsp. olive oil
  • 2 Tbsp red wine vinegar
  • 1 tsp dried basil leaves
  • 1 green onion, rinsed and sliced
  • 1 clove garlic, minced
  • salt to taste
  • pepper to taste

Directions

  1. In a small bowl, whisk together the oil, vinegar, basil, green onion, salt, pepper and garlic.
  2. Add tomatoes and toss.
  3. Refrigerate overnight or longer.
  4. Place on a serving plate and enjoy!

    • These are my favorite way to eat tomatoes. If I don’t have cherry tomatoes I will cut regular tomatoes into chunks and let them sit about an hour and eat ….so good! Thank you!

    • This is the first time in 28 years we didn’t plant cherry tomatoes. With just the two of us we can never eat them all because we plant so many Big Boy tomatoes. With that being said, our veggie plants look amazing. My husband built raised beds so the rain hasn’t been too bad on them.

      • Yes, the cherry tomatoes grow like gangbusters. My neighbor put them in pots on her deck and shared the bounty once they got going. My father planted tomato plants years ago and the squirrels and birds got them and took one bite and left them, so he said “never again” – the raised beds are a Godsend this year with all the rain – we had an entire day of rain yesterday!
