Meatless Chicken Noodle Soup

I was hungry for Chicken Noodle Soup but I had my fill of chicken. I decided to make Meatless Chicken Noodle Soup. You can use your own chicken stock, chicken broth or water with bouillon cubes to make the broth.

  1. We had a light Sunday supper last night with an almost-stew chicken noodle soup. IThere were meaty thighs, celery, carrots, onions, peppers, home-grown mung bean sprouts, mushrooms, and leftover rotini pasta involved in the process. I actually used a ham broth that I had done previously, so the flavor was quite nice. The chicken was none the wiser for the broth switch. And now I have the thigh bones to make more broth for next time.

    I did it in the InstantPot before sitting down to watch “Hillary” last night, and served it forth to accompany “Les Miserables”. It stayed at a very hot temp (180Β°+) on the KEEP WARM setting, so I added the room temperature pasta at serving time to cool it off a bit!

    • Me too. As a kid I ate Campbells Chicken Noodle Soup. I always laughed because it always had one tiny pea size piece of chicken in it….it still does. This is so much better than Campbells! Thank you for all your nice comments!
