Rhubarb Crisp
Rhubarb is one of my favorite vegetables to use in desserts. Yes it is a vegetable and not a fruit like you would think. This Rhubarb Crisp recipe has that sweet and tart flavor I just love. I have grown my own rhubarb for over 25 years now. It is just coming into season. I wash it, cut it and put it into 2 cup freezer bags then I freeze whatever I don’t use right away. That way I can make my favorite rhubarb recipes any time of the year.

Diane, this sounds SO good. Strawberry rhubarb pie is very popular in parts of Pennsylvania. I crave it every year. I don’t think people realize how good rhubarb is.

I love rhubarb. Your recipe reminds me of when I was a kid in the UK and sometimes at lunch we’d get rhubarb crumble with hot custard.

We are a long time from rhubarb season here. I have a recipe for a rhubarb coffee cake which I make every year which I can’t wait to make.
Oh I would love to try that! I make a Rhubarb Cake but never a coffee cake.
It’s a lovely recipe that my dietician/neighbour tried and was impressed with so she gave it to me. It’s made with sour cream so very moist and keeps for a week. A nice crunchy topping. Could also be done with blueberries. I’m going to do a post on rhubarb in June, as we used to have a big patch on the farm, and will post it then. I’m sure it will be at least June before we see any rhubarb here!

Yummy! We used to eat a lot of rhubarb when I was a kid because we had a HUGe patch. I have a few plants now that dad and I picked up from a friend a few years ago. It has never taken off for some reason and I have not harvsted any. A few days ago I was thinking I should cut a few stalks since my son and his friend are here. I am not sure if they have eaten it before so it would be a good time. Thanks for the receipe!
You need to fertilize it and it should take off again for you.

We used to pick a stalk and dip it in sugar as a kid. Now it goes in cake etc. I can’t believe we ate it that way! lol

Oh please do! I also make Rhubarb Sauce, Pie, muffins…..etc. Rhubarb is very tart then you pair it with the sweet and it is the best tasting combination.

That’s so funny, everyone puts strawberries in theirs. I have been making rhubarb recipes for decades and have not ever put strawberries with it. I must try it sometime!

I didn’t know you could freeze rhubarb. Do you have to blanch it first? Ours is newly planted, so I think we’ll be a year or two off freezing any, but nice to know we can.
No I don’t blanch it. I wash it, let it dry, cut it into about 1/2″ pieces and put 2 cups of it in a baggie. Then I put the full baggies into a freezer bag and freeze. That’s it Chris!

If you ever get the chance to get some try it. It is very tart and when you put it with the sweetness of the dessert it is amazing!
