Asian Ramen Noodle Chicken Salad

This is the best Asian Pasta recipe! For those that follow me, you know I love Ramen Noodles! I decided to make my own Asian recipe (with inspiration from a Pinterest recipe by ohines) and I am so glad that I did! This would be a great pasta salad to take to a brunch, picnic or just as a meal like I did.

Ingredients

In a medium non stick fry pan, add the

sesame seeds over medium high heat.

Cook them, stirring frequently, until lightly

brown. Remove from the heat and set aside.

In a large pot filled with hot water,

bring to a boil over medium heat.

Add the Ramen Noodles only.

DO NOT ADD THE FLAVOR PACKETS.

(Save the packets for soup or throw

them away.) Cook for 3 minutes or until

al dente. As they cook keep trying to pull

apart the noodles without breaking them.

Drain noodles and rinse

with cold water until cool.

Pour noodles into a large bowl.

In a medium bowl add the vegetable oil,

soy sauce, vinegar, sesame oil, sugar,

sesame seeds, ginger and pepper.

This is the pasta dressing.

Whisk the dressing until combined.

Poor the dressing over the pasta.

Toss gently until it is combined.

Add the chicken, parsley and green onion.

Toss gently until combined and no liquid

remains. Refrigerate, covered, for at least 1/2 hour.

Ingredients

  • 1/4 cup sesame seeds
  • 5 packs Ramen Noodles (3 ounces each)
  • 1/2 cup vegetable oil
  • 1/3 cup soy sauce
  • 1/3 cup rice vinegar
  • 1 tsp sesame oil
  • 3 Tbsp. granulated sugar
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper
  • 3 cups shredded cooked chicken (I used rotisserie chicken)
  • 1/3 cup chopped parsley (or cilantro)
  • 1/3 cup sliced green onion

Directions

  1. In a medium non stick fry pan over medium high heat cook the sesame seeds, stirring frequently, until lightly brown. Remove from the heat and set aside.
  2. In a large pot filled with hot water, bring water to a boil over medium heat.
  3. Add the Ramen Noodles….DO NOT ADD THE FLAVOR PACKETS….. (Save the packets for soup or just throw them away.)
  4. As the pasta cooks gently pull them apart, with tongs, without breaking the pasta.
  5. Cook the pasta for 3 minutes or until al dente.
  6. Drain the pasta and rinse with cold water until cool. Once completely drained, pour the pasta into a large bowl.
  7. In a medium bowl add the vegetable oil, soy sauce, vinegar, sesame oil, sugar, sesame seeds, ginger and pepper. This is the dressing.
  8. Whisk the dressing until combined.
  9. Pour the dressing over the pasta. Toss gently until combined.
  10. Add the chicken, parsley (or cilantro) and green onion.
  11. Toss gently until combined and no liquid remains.
  12. Cover and refrigerate for at least 1/2 hour.
  13. Toss and place on a serving plate.

  1. This recipe looks tasty. I used to be a Correctional Officer in a maximum security prison. I was always astounded how creative convicts could be with ramen noodles, hot pots and random ingredients they were able to purchace fro their commisary. Some of their creations looked pretty good.
