Easy Cucumber Appetizer

Cucumbers with a delicious creamy filling and topped with tomato is what makes this the perfect appetizer. This is so simple to make but tastes like you spent a lot of time making them.

Ingredients

Peel the Cucumber and

slice it into 1/2” pieces.

Using a small spoon scoop out most of

the seeds leaving the bottom in tact.

In a small bowl add the cream cheese,

mayo, ranch dressing, chives or dill,

garlic salt and pepper.

Cream until smooth with the

back of a large spoon.

Using a small spoon like a baby spoon,

fill the centers of the cucumber slices.

Add a small piece of tomato on top.

Top with black pepper (or dill if you

put dill in the cream cheese mixture).

Place on a serving plate and

garnish with fresh parsley.

Refrigerate until ready to serve.

 

Easy Cucumber Appetizer

Ingredients

  • 1 large cucumber
  • 2 oz. cream cheese, softened
  • 1 & 1/2 tsp mayo
  • 1 & 1/2 Tbsp. prepared ranch dressing
  •  pinch of garlic salt
  •  pinch of black pepper for the filling
  • 1 Tbsp. chives or dill, chopped small
  • 1/4 Italian tomato, seeds removed and cut into small pieces
  • pepper or dill for the tops of the cucumber pieces
  • parsley for garnish, optional

Directions

  1. Peel the cucumber and slice into 1/2″ pieces.
  2. Using a small spoon scoop out most of the seeds making sure you leave the bottom of each piece in tact.
  3. In a small bowl add the cream cheese, mayo, ranch dressing, chives or dill, garlic salt and pepper.
  4. Using the back of a large spoon, cream the mixture until smooth and creamy.
  5. Using a small spoon like a baby spoon, fill the centers of the cucumber slices with the filling.
  6. Add a small piece of tomato to the top.
  7.  Lightly sprinkle black pepper over the tops (or dill if you put dill in the cream cheese mixture).
  8. Place on a serving plate and garnish with parsley.
  9. Cover and refrigerate until ready to serve.

  2. Well you went and got all fancy-schmancy on us … right now I am cold and seeing the cukes made me colder … they sure are fancier than just skinning them and slicing them onto a plate.

    • Haha I do that when we get them from the store and they have a slight bitter taste to them. Normally I sliced and salt them and that’s it but I can’t stand bitter cucumbers. So by making them this way you can’t taste the bitter and they are so good!
