Easy Chicken Pot Pie
This is my Mother-in-laws favorite Chicken Pot Pie recipe that I make. I invite her over every time I make it but today I also had my son, his wife and my grandson over too. I have been making my Pot Pie like this for probably over twenty years. I believe it was a Campbell’s Soup recipe. I make a 9” x 13” pan of it so there is enough and I love any leftovers!
Ingredients
Place the vegetables in a large bowl.
Add the cream of chicken soup.
Combine the mixed vegetables and soup.
Add the chicken and stir the
chicken into the vegetables.
Spray a 9” x 13” pan with cooking oil.
Pour the vegetables into the dish making
sure they are level all the way across
the top. This will ensure the topping is
the same thickness when it bakes.
In a small bowl, whisk the eggs.
Add the milk and whisk until combined.
Add the Bisquick.
Whisk just until combined.
Mixture will have small lumps.
Pour over the vegetables
making sure it is even.
Bake in a preheated 400 degree
oven for about 30 – 35 minutes or
until the top is a golden brown.
Place on serving plates and enjoy!

Ingredients
- 2 cups cooked chicken cubes (approximately 2 large breasts)
- 3 cans (10.5 oz each) cream of chicken soup
- 6 cups thawed frozen mixed vegetables (corn, carrots, peas, green beans)
Topping
- 2 eggs
- 1 cup milk
- 2 cups Bisquick
Directions
- Preheat oven to 400 degrees.
- In a large bowl combine thawed vegetables and soup.
- Add the chicken and stir.
- Spray a 9” x 13” baking pan with cooking oil.
- Pour the vegetables into the pan. Spread them out flat and even.
- In a small bowl whisk the eggs. Add the milk and whisk to combine.
- Add the Bisquick and whisk just until combined. There will be small lumps remaining.
- Pour the Bisquick mixture on top of the vegetables.
- Bake for about 30 – 35 minutes or until the top is a golden brown then serve.

That looks yummy. I’ve tried a few pop pies in the last month, looking for a good one. Even Marie Callendar’s came up short. I should have known good ol’ Bisquick would be a winner.

What a timely recipe…..as I had just bought some delicious deli prepared pot pies from the grocery store yesterday and was thinking, I could make this. They make theirs with the leftover roasted chickens they don’t sell and puff pastry, but I like the idea of the Biscuit mix better!
Another way I fix it is with Stove Top Stuffing. I prepare the stuffing and lay it evenly on top…excellent too if you like Stove Top Stuffing.

Oh definitely! That’s why I make a 13” x 9” baking dish full! I even finished off the last bowl for lunch and sent leftovers home with my mother in law!

Good read but no canned soup in Latvia.Here we go again they make their own ,have to. I ask friends in uk to come to stay and bring me all I need that cant be seen on shelves here.Wide range of foods here some lovely but no European tins or sauces or what we expect to have after 60 years in uk from birth. Mind you stuff that we could never hope to buy is here and used as normal. Thanks for reading my blog now backed by wordadd.

My m other used to make them when I was a kid. Forgot they even existed.
This is the modern day pot pie! lol Your mom probably made her own crust where this one is made with Bisquick.
