Do you remember your mom making this delicious Marinated Cucumber, Tomato & Onion Salad? It is such a refreshing way to use your fresh vegetables. We make this every August when the garden is plentiful. By this time of the year I start craving it and have to whip up a batch, even though it means buying store bought vegetables.

  1. UGH – now this is all I can think about!! I’m so ready for summer!! We have a hydroponic greenhouse nearby and it looks as if I need to make a trip for some fresh tomatoes and cukes!

  2. Cucumber, onion, and tomato salad your way sounds delicious. We in India usually add salt, chilly powder and lemon juice and have it but I must try this marinaded salad.

  3. Another favorite of my moms – when cukes were plentiful in the Summer, she had several types of marinated cukes and tomatoes recipes … one she just sliced up the tomatoes, cukes and layered them between pieces of mozzarella cheese, then drizzled Italian dressing on them.
