Blueberry Loaf Cake

My two garden blueberry bushes gave me an abundance of blueberries this year. I have a freezer full of gallon bags of them. I thought I would try a new blueberry recipe. Although this looks like bread, it is actually a loaf cake. What a nice touch it was adding the cinnamon sugar topping giving this delicious and moist Blueberry Loaf Cake an extra burst of flavor.

    And glad you blueberry bush gave you so many / I have not had success growing these little berries

    Oh and the other day – a young lady was across from me and she had store bought blueberry muffins – all processed and guess what – no blueberries at all. It was a jelly like colored substance – just horrible

    • Isn’t it amazing that people actually buy that fake stuff when it is so easy to make your own. I have only had one year I didn’t get a huge crop of berries and that was because of a freeze. My bushes are very old and every year I think it will be the last but they just keep producing! Thank you Prior and have a great Sunday!

  2. I have a big stash of them in my freezer as well, it always makes me feel secure; I pick every year with my grandkids and they know that means pancakes, muffins, and smoothies all year. This loaf looks delicious!

  3. The blueberries and raspberries this year have been amazing (I don’t grow them, but you can always tell when it’s been a good season!). I have a huge container of fat, sweet blueberries waiting for something like this. Maybe I’ll give it a go this week!

    • If you put fresh blueberries in front of me, I can’t help but to eat them. I don’t recall ever baking with fresh blueberries, always frozen….lol Thank God I get an over abundance so I hurry up and put them in the freezer. My Granddaughter eats them frozen!

  4. This looks moist and tasty – my mom used to make blueberry loaf cake as well. She’d buy blueberries in the Summer when they were cheaper, wash them and put them on a cookie sheet to freeze. Then pack them away in containers. She’d make blueberry muffins in the dead of Winter.

      • My mom did that a lot and made those blueberry muffins, loaf cakes and pancakes. I am probably the only person on earth who’s never had a smoothie … or avocado toast. There is a young woman and we follow each other … she is a foodie (more eating, than cooking, but her food she cooks always looks so good) … she often makes avocado toast – I told her the same thing, that I am the only person who’s never had avocado toast. Must. Expand. My. Horizons. 🙂

      • Well, we’re a pair aren’t we? I’ve only had avocado as guacamole and I could take or leave that and would rather have salsa with chips instead.

      • Salsa is good for you – I cannot have the chips in the house as I will eat them up – I gave up salty snacks when I gave up sweets, but went back to eating them as I missed them and nothing satisfies like a crunchy chip. I can’t have Pepperidge Farm Goldfish in the house as I will eat them.

      • I always wondered about the pickin’ part. I think even tea leaves are kinda picked individually too, instead of by branch. I have only wild berries, which are a bit too sour for even juicing.
