Slow Cooker Linguine with Mushrooms

If you love mushrooms and pasta, try this Slow Cooker Linguine with Mushrooms. Mushrooms are high in antioxidants, they speed up the metabolism and are low calorie. This healthy recipe is loaded with mushrooms, pasta and a delicious sauce. This was even better the next day! I made the sauce with the vegetables in the slow cooker, however, it could be made easily on the stove top.

Ingredients

In a slow cooker add all of the

ingredients except the linguine.

Stir to combine.

Cover and cook on low for 4 hours.

In a large pot cook linguine according

to directions on the package.

Drain pasta.

Place pasta into a large bowl.

Ladle all of the sauce on top.

Toss to combine.

Top with Parmesan Cheese

if you would like.

Serve hot or cold. I felt it was even

better cold the next day because

the sauce soaked into the noodles.

 

Slow Cooker Linguine with Mushrooms

Ingredients

  • 1 pound mushrooms, cleaned and sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp pepper, or to taste
  • 1 tsp salt, or to taste
  • 2 cups vegetable stock
  • 14.5 oz. can diced tomatoes
  • 2 tsp dried basil
  • 2 tsp olive oil
  • 12 oz. linguine
  • parmesan cheese, optional

Directions

  1. In a slow cooker combine everything except pasta.
  2. Stir to combine, cover and cook on low for 4 hours.
  3. In a large pan cook the pasta according to the package directions and drain.
  4. Place the pasta in a large bowl.
  5. Pour all of the mushroom sauce on top of the pasta and toss to combine.
  6. You can top with Shredded Parmesan cheese if you wish then serve.
  7. Serve immediately or serve it hot or cold the next day.

    • Hahaha I rarely make recipes with mushrooms since my husband doesn’t like them so I really enjoyed this! I actually liked it better the next day cold because the pasta soaked up the liquid and the flavor was so good. Have a great day!

    • I have made plenty of pasta. I raised chickens and had so many eggs that I made pasta with them and gave away bags of pasta for Christmas gifts…lol I love making it but just not enough hours in my days until I retire now. However, I will be making it again! You are 100% correct! Thanks for your comment.
