Crab Meat Frittata

This was absolutely delicious!!! Making eggs this way was the best tasting eggs I have ever had. You can make this with imitation Crab Meat or real Crab Meat. What a wonderful meal for breakfast, lunch or supper. This is low in calories but high in flavor.

Ingredients

In a large oven safe pan (I used a

10” cast iron pan) melt 2 Tbsp of

butter over medium heat.

Add the sliced green onion and cook a

few minutes until the onion is tender.

Add the mushrooms and cook a minute more.

If you use fresh mushrooms, put them

in when you put the onions in.

Remove the pan from the heat and

put the vegetables in a bowl.

In a large bowl add the egg yolks. With a

mixer on high speed, beat the egg yolks

until they are slightly thickened

and a lemon color.

Use a spoon and stir in the milk,

hot pepper sauce and salt.

Wash your beaters and dry thoroughly.

Place the egg whites in a clean medium

bowl. Using the mixer on high speed,

beat egg whites until foamy.

Gradually add the egg white to the yolk

mixture, whisking just until blended.

Turn on the broiler.

In the oven safe pan you already

used, melt 1 Tbsp of butter

over medium heat on the burner.

Pour the egg mixture into the pan.

Cook until the egg is almost set.

Remove from the heat.

Place the pan 4”- 6” under the hot broiler.

Watch carefully and broil until the top is set.

Remove from the oven and

top with the crab meat.

Add the mushroom and onion mixture.

Top with the cheese.

Place the pan back under the

broiler until the cheese melts.

Slice and serve immediately.

Ingredients

  • 3 Tbsp butter, divided
  • 4 oz can sliced mushrooms, drained (you can use fresh mushrooms)
  • 2 green onions, sliced thin
  • 8 eggs, separated (make sure no egg yolk gets into the egg whites)
  • 1/4 cup milk
  • 1/2 tsp hot pepper sauce
  • 1/4 tsp salt
  • 8 oz flaked imitation crab meat, (or you can use real crab)
  • 1/2 cup shredded Swiss cheese

Directions

  1. In a large 10″ oven safe frying pan, melt 2 Tbsp of butter over medium heat.
  2. Add the sliced green onion and cook a few minutes until tender. (If you use fresh mushrooms, put them in with the onions.)
  3. Add the canned mushrooms and cook another minute.
  4. Remove the pan from the heat. Place the mushrooms and onions in a small bowl and set aside.
  5. In a large bowl add the egg yolks. With a mixer on high speed, beat egg yolks until they are slightly thickened and a lemon color.
  6. Use a spoon and stir in the milk, hot pepper sauce and salt.
  7. Wash your beaters and dry thoroughly. Place the egg whites in a clean, medium bowl. Using a mixer on high speed, beat until foamy.
  8. Gradually add the egg whites to the yolk mixture using a whisk. Whisk just until blended.
  9. Turn on the broiler.
  10. In the oven safe pan you already used, melt 1 Tbsp of butter over medium heat.
  11. Pour the egg mixture into the hot pan. Cook until the egg is almost set. Remove from the heat.
  12. Place the pan 4″ – 6″ under the broiler until the top is set.
  13. Remove the pan from the oven and add the crabmeat.
  14. Add the mushrooms with green onion.
  15. Add the cheese.
  16. Place back under the broiler until the cheese is melted.
  17. Slice and serve immediately.

  1. Thanks. Now I’ve got to put my shirt in the wash because I’ve drooled all over myself. BTW, you may have noticed my blog got shut down. I keep trying to get them to give it back, but no joy so far.
