Sausage & Cheese Taco Pasta
I love the taste of taco seasoning so I used it to create this amazing Sausage & Cheese Taco Pasta. I added medium salsa to kick the heat up a bit and add even more flavor but you can use mild, medium or hot salsa in this recipe.
Ingredients
Place the sausage and the onion
into a large frying pan breaking
up the sausage until crumbly.
Cook over medium heat and
fry until no pink remains.
Add the taco seasonings,
pepper and tomatoes.
Stir to combine.
Pour in the salsa.
Stir well and set aside.
In a large pot add salt to the water and
cook pasta according to package directions.
Drain the pasta and place it in the sauce.
Place pan back on the burner over
medium heat and cook until sauce is hot.
Once hot add the cheese.
Gently toss until the cheese is melted and
mixed in then remove from the heat.
Place on serving plates
and serve immediately.

Ingredients
- 1 pound sausage
- 15 oz. can diced tomatoes
- 12 oz. wide noodles
- 1 medium onion, diced
- 2 Tbsp taco seasoning
- 1 or 2 cups shredded cheese, cheddar or Mexican
- 16 oz. salsa, (mild, medium or hot)
- 1/4 tsp pepper
- 1/2 tsp salt, for the pasta water
Directions
- Place the sausage and onion into a large frying pan. Break it up until crumbly and cook over medium heat until the sausage is no longer pink.
- Add the taco seasoning, pepper and tomatoes. Stir until combined.
- Pour the salsa into the pan and stir. Set aside.
- In a large pot, add salt to the water and cook the pasta according to the package directions.
- Drain the pasta and add it to the sausage mixture. Place the pan back on the burner over medium heat and gently toss the pasta with the sauce.
- Continue to cook until the sauce is hot gently tossing.
- Add 1-2 cups of shredded cheese. If you like it cheesy add 2 cups, not so cheesy add 1 cup. Toss gently until the cheese is completely melted.
- Remove from the heat and place on serving plates and serve immediately.

Just to illustrate the range you find in any accomodative grocery store here in New Mexico – my usual low to medium hot salsa is a garlic chipotle base. Then, there usual is another 20 feet of shelves to choose from. Plus local roadside stands.

Definitely something my husband and I would enjoy, and if I set aside a portion without cheese, my kids will love it, too (I know, who doesn’t love cheese, right?!?). Thanks for sharing!

You’re welcome Myndi! I did that for my grandkids too. My granddaughter hates cheese so I just dished theirs out first and then added the cheese. It worked just fine.

We sure are – I could imagine having that pasta the next day. My mom loved spaghetti and she would make baked spaghetti and put the rest in a container … it was a joke because she would go in there and take a little dish and keep eating a little more out of it til there was not enough to make leftovers for both of us. I said, why keep wasting little dishes, just eat it and enjoy it!
