Candlestick Salad

This is definitely the strangest Mennonite recipe I have ever made! This recipe came from a Mennonite cookbook that I received for Christmas and it really was very tasty. Have you ever heard of this recipe before? From what I have read it may have originated in the 1920’s. If you know any history about this recipe please leave me a comment.

The recipe called for a Maraschino Cherry on top but we bought fresh cherries on sale at the store today so I used those instead. It didn’t say to put the cherries around the pineapple but without them it was a very strange picture!

The lettuce and the pineapple-cherry ring represent the candle holder. The banana is the candle and the cherry with a stem is the wick. The mayonnaise or whipped cream drizzled down the banana represents the candle wax.

not do a step by step directions

with pictures. Just read the recipe

Candlestick Salad

Ingredients

  • 1 large lettuce leaf, rinsed and patted dry
  • 2 slices of pineapple rings
  • 1/2 large banana
  • 10-15 fresh cherries or maraschino cherries
  • mayonnaise or whipped cream

Directions

  1. Place lettuce on a small plate. Stack the two slices of pineapple on top of each other and the lettuce. This is the candle stick holder.
  2. Insert the banana half, flat side down, into the center of the pineapple rings. This is the candle.
  3. Slice the tip of the banana off making a small hole for the cherry.
  4. Cut a cherry, with a stem, in half and place it on top of the banana. This is the wick.
  5. Drizzle the mayonnaise or whipped cream down the banana and onto the pineapple. This is the wax.
  6. Place cherries around the pineapple.
  7. Serve immediately.

  1. Never heard of the name but on my last cruise to South Africa and back to France with Thompson Spirit I saw them make something so similar it must be popular in Europe. The chef was French and told us make with best ice cream and banana drizzled with white chocolate as wax it was all edible. My wife had two of then so lovely with Ameretto or Moka cocktail
