I just made a much plainer version (salt, pepper, olive oil, lemon) of roasted carrots as a side dish tonight, I so wish I’d seen this!! It sounds much more like what I was wanting 😂 very glad to know it for next time!
Yes there is always a next time! I think that’s why it was so good, not your normal version but not over powering either. Definitely my favorite. Enjoy!

That will be a great addition to roast.
It’s funny you mention that. I always make roast with carrots and potatoes. However, this recipe is such a different taste from my roast recipe. I always thought my carrots with my roast were my favorite until I made these!
