White Chocolate Macadamia Nut Cookies
This recipe tastes just like Subways White Chocolate Macadamia Nut Cookies. It is another favorite Christmas cookie of mine. This is a wonderful combination of Macadamia Nuts and White Chocolate combined with a delicious cookie.

Ingredients
Line your cookie sheets with parchment
paper. There is no need to grease them.
In a medium bowl whisk together
the flour, baking soda and salt.
Set aside.
In a large mixing bowl beat butter
until smooth and creamy. Scrape
down the sides with a spatula.
Add the brown sugar beating until combined.
Then add granulated sugar beating until combined.
Scrape down the sides.
Add the eggs, one at a time beating
well after each egg addition.
Scrape down the sides. Add the
vanilla, beat and scrape the sides.
Add the flour mixture about a cup
at a time, beating on low until mixed
in completely after each addition.
Scrape down the sides.
Add the Macadamia Nuts and white
chocolate chips to the cookie dough.
Using a large spoon, mix
them into the cookie dough.
Using a heaping tablespoon or cookie scoop,
place cookie dough onto the parchment
covered cookie sheets keeping them
about 3” away from each other.
Bake in a preheated 350 degree oven for
10-12 minutes or until lightly brown.
Do not over bake these cookies.
Remove from the cookie tray and cool
on a cooling rack. Once cool, store in an
airtight container. These freeze well too.

- 1 cup granulated sugar

- 1 Tbsp vanilla extract
- 4-1/4 cups all purpose flour
- 2 tsp baking soda
- 1 tsp salt
- 12 oz bag of white chocolate chips
- 1-1/4 cups chopped macadamia nuts
Directions
- Preheat oven to 350 degrees.
- Line cookie sheets with parchment paper. There is no need to grease them.

- Add the granulated sugar, beat and scrape the sides down.
- Add the eggs one at a time, beating well after each egg addition, scrape down the sides.
- Add vanilla, beat and scrape the sides.
- On low speed beat in the flour mixture, 1 cup at a time until completely mixed in.
- Add the macadamia nuts and white chocolate chips. Using a large spoon mix just until combined.
- Place cookie dough by heaping tablespoons (or using a cookie scoop) onto the parchment lined cookie sheets. Keep the cookie dough 3” apart.
- Bake the cookies for 10-12 minutes or until they are a light brown. Keep a close eye on them toward the end as depending on your oven they may take less time or more time. Do not over bake.
- Place cookies on cooling rack.
- Once cool store in an airtight container or freeze.

Walnuts would work well but really any one of your favorite nuts would work.

Diane, do you roast the macadamia nuts or just use raw ones? I tried to roast some and they overcooked.
Carla I use a jar or bag of dry roasted macadamia nuts.

Do you think that gluten free flour would work with these cookies? They are one of the few nuts I can eat without stomach issues.
Hi Alene! Yes as long as your gluten free flour is 1 to 1 for all purpose flour such as King Arthurs brand. Other wise you will need to adjust it.
