Whoopie Pie Cookies
I have many favorite cookies but Whoopie Pie Cookies are at the top of my list. A delicious chocolate cake like cookie with a creamy frosting in between the two cookie layers is what makes this cookie so delicious! According to Wikipedia, they are considered a cookie, sandwich, pie or cake. According to me, they are considered amazing!

I didn’t realize until a couple of years ago that these could be made at home — and often are. I’d always associated them with the “treats” you find on the endcaps at convenience stores. I do believe this is one I’m going to try. I have in mind that a little peppermint extract in the frosting, and the inclusion of some crushed candy cane bits would lead to a nice Christmas treat.
